I have a tendency to go overboard. Whether it be decorating, amount of time spent on hair, listening to a single song. I always go overboard.
While this may not always be a good thing, it certainly is in cooking. I go overboard with the amount of time I spend on cooking, the amount of time I recipe hunt and I am generous in regards to essences and add-ins. This is what made this cake such a good choice. And I think I can definitely go overboard for the family receiving it. They are awesome (and have a very adorable dog :))
A very familiar chocolate mudcake which is staple as a recipe.
Peanut Butter Cream Cheese Frosting. Oh dear.
A Peanut Butter Chocolate Glaze which was so thick I made it into a second layer of frosting.
Crushed peanuts.
Honey Roasted Macadamias.
Yea, aha, I know. I think I went overboard again.
This recipe was actually from the most amazing Deb from Smitten Kitchen. I didn’t use her cake because of all the freezing and crumby issues which I didn’t really have time for so I used this mudcake, just like it was when I pretended I was serving to Doctor Who. Moist, rich and beautiful. I didn’t line my cake tin (only greased) and my bottom and sides came out a little crumby. That was where I learnt that crumbs are my greatest enemy in regards to frosting.But it all worked out fine so whatever 🙂
Her peanut butter frosting is my hero. It was not overly sweet (even with the 5 cups of icing sugar!) and suited the cake spectacularly (I ate a spoonful of frosting speckled with cake crumbs!).
I was not the happiest with the peanut butter chocolate glaze because it was much too thick. I initially wanted to use it as a drippy glaze but due to its thickness, I was forced to make it a second frosting around the outside. Life. What can you do 😛
