The End Of ‘The Crack’ Horrification

142I have a penchant for horror movies. Don’t look at me like that, I have had and am currently having a wonderful childhood. And it helps that while I write this post, the rain is thundering down, putting me in my mood.

I love the thrill. The anticipation of opening a door in the dead of night when there is no one with you. The strange sounds which crescendo outside your window but when you look through, there is nothing but the last few trickles of rain. That shiver which glides down the back of your neck as if someone is watching your every move…

Sorry freaking you out? Don’t worry, besides the psychological horror which is my absolute favourite, I also don’t mind the serial-killer-on-the-loose style like Texas Chainsaw Massacre. They really are just for some slashing and whatnot and that’s it, screaming with friends (if you’re into that kind of thing :P) – I can’t even consider it horror unless it’s based on real events

Ok fine, so besides the little dolls which stare unblinkingly at you, tormenting your insides with their glassy eyes and the black figure which shadows over you before retreating back into the shadows of your room, the world does have real fears.

“5, 6 grab your crucifix”

Fears we have made ourselves and combat on a daily basis. And no, I am not talking Scooby Doo style, I am talking things from as small as arachnophobia (guilty as charged) to the more pressing such as murder and robbery. Maybe, one day we will have a Utopian society and clean our hands of this filth and forget our irrational phobias but until then, you have to combat your way around it.

So how does scaring you a little and fear itself have anything to do with what I baked today? Well, today I finally overcame and beat my fear and created what I found to be a gorgeous result.

What was my fear?

“She stepped into her kitchen, unaware the wrong recipe lay on the counter. She casually began to rifle through her spoons and laying out saucepans when suddenly, the paper wafted in the breeze towards her, sliding silently down the counter. Oblivious, she turned to look at the recipe. *Psycho music*
The pain she felt was surreal and her pools of fresh blood started to drip into the sink as she spiralled into the beckoning darkness.”

Well, no there was no blood, I am bringing drama to the moment – just a little bit of sweat. I wasn’t mentally prepared that early in the morning to make what I had to. But I had to. A cheesecake recipe, scribbled with my harsh writing stared at me in the face. And my fear of ‘the crack’ swam before my eyes.

Back when I was ignorant of the cooking realm, the cheesecake was a friend. Store bought and much loved, we enjoyed countless moments together. But then one evening, I overstepped my mark on our friendship and attempted to make one. And then I saw ‘the crack’. Crack after crack after crack. And while the cheesecake still tasted the same, the look it gave me had changed. And I thought it would haunt me forever as the cracks got worse.

Until now.

My cheesecake recipe was from the delectable Lindt chocolate website. Nothing to fear here, I presume unless you have a chocolate phobia which honestly is impossible!

171I had had my eye on this recipe for over a year and now finally on making, it turned out the way the professional chocolatiers made it. And that was ’cause it was the end of my ‘Crack’ issues!

Now without further ado, I give you my completely over the top, adapted recipe of Blueberry Two Tone Cheesecake featuring Blueberry Intense Lindt Excellence 70% Chocolate!

Blueberry Two Tone Cheesecake

Makes: 12-16 servings

Ingredients

Crust

Cheesecake

  • 600g cream cheese, softened
  • 140ml thickened cream
  • 100g caster sugar
  • 30g light brown sugar
  • 1 tsp vanilla essence
  • Zest of one large orange
  • 3 eggs
  • 3 tbs plain flour, sifted (prevents cracks forming and air bubbles)
  • 250g Blueberry Intense Lindt Excellence 70% Chocolate
  • 250g fresh or frozen blueberries

Base

  1. Grease and line a 20cm springform cake tin (if making in  a tin, leave overlapping on sides so easy to pull chilled cake out)
  2. Place biscuits and chocolate into a food processor and grind until mixture is similar to breadcrumbs
  3. Tip into a large bowl. Add melted butter
  4. Mix until crumbs are moistened and clumping together
  5. Spoon and press evenly over base before refrigerating

Cheesecake

  1. Preheat oven to 150 degrees C
  2. Beat the cream cheese until pale and fluffy
  3. Beat in the sugars and then the vanilla essence, rind and plain flour
  4. Beat in one egg at a time, combining well after each addition
  5. On low speed, beat in the thickened cream
  6. Divide the mixture in two
  7. Melt the Blueberry Intense Lindt Excellence 70% Chocolate (mine took 50 seconds in 20 and 10 second intervals in the microwave)
  8. Into one batter, beat in melted chocolate until just combined
  9. Wash blueberries and gently pat dry, making sure no juice is released
  10. Pour in chocolate batter over base
  11. Tap tin lightly on the counter to get rid of air bubbles and smooth batter
  12. Pour plain batter over chocolate batter – tap again
  13. 97Arrange blueberries on the top layer evenly (don’t place them too close since they release a little juice while baking)
  14. Place springform inside another tin which doesn’t have a removable base *psst – this is how I have no more fear for cracks – this was a wonderful idea from here*
  15. Place that tin inside a deep baking dish. Pour water in until reaches 3/4 of the way up to tin
  16. Bake in water bath for 50-60 minutes or until edges are set but the centre slightly wobble
  17. 151Cool in oven, door slightly ajar for 20 minutes before letting cool to room temperature. Refrigerate for 3-4 hours before serving. – WARNING: MOST AMAZING SMELL
  18. Slice, serve and enjoy!

    I watch horror movies compulsively. Then sleep with light on. Never let my feet cross over the edge of the bed. I mean you just never know right. This is a wonderful treat. I am such a huge cheesecake fan. So good.

I can’t watch horror movie, don’t like the adrenalin rush in me when I am watching it..and than dreams comes if you know what I mean..but your cake loook mouthwatering..nothing scary about it!!!Would love one slice right this moment..can’t even kill the craving since I through everything sweet out..now that is scary lol!!!!

The first movie my hubby & I watched together was “Halloween” (I know, lame in comparison to today’s thrillers…) and since then, he’s taken great delight in waiting until the scariest, most suspenseful moment in any movie to “jump” at me (which of course, elicits screaming — mine — and palpitating hearts and a whole bunch of laughs!) This was a fun read on a rainy morning!

  9. I do enjoy a good scare every once in a while, but I do not like the monster or ghost movies-just the ones with really evil humans!
    Cream and berries is always a delight, but add some chocolate to that and it takes it to an amazing level. This dish is calling my name! Thanks for the link and your photo is fabulous!

  10. I like horror movies too but only watch when my hubby is around because I can a chicken esp after watching all the doors moving and the scary aspects of these movies.

    My my!!!!! Great recipes and that berries on top are awesome.
