A Third Liebster + A Super Chewy, Super Tasty, Super Sugarless Treat

Firstly, I would like to say thank you for the support shown in regards to my last post. I feel much better now and know that there were a couple of slightly off points in that post. But you (and cheesecake) always make me feel better šŸ™‚
For now, it is touchwood and good thoughts all the way.

Secondly, I am very very very happy to announce that I have received a third Liebster Award šŸ˜€
This time from the wonderful Little Housewife – This lady is the epitome of perfection. All her posts make me want to devour the computer screen but I really doubt I would get the flavour of her wonderful baking that way. Kind, sweet and with a fantastic sense of humour, she is like a baking idol!

  5. Eliot’s Eats – I am not sure how many times I have sat and gone through the wonderful recipes on this blog – Sweet, savoury, delicious, more delicious – This wonderful couple make everything!

Now this will be a short post with a recipe that I made myself. *Applause* *Applause* šŸ˜›

I was looking all over for a healthy muesli bar recipe. I was looking for something filled with nuts, oats and cereals which could fill me up while I was studying and keep me focused (are you not proud) – I researched brands initially but I can eat all those preservatives in store-bought pastry and be healthier! And looking around on the web, I was not interested in recipes containing 1/2 cups of brown sugar and butter. Emphasis on the healthy aspect. So I decided to make my own. And I am pretty happy.

And gasp if you must but I didn’t even use the optional chocolate. This is a non-chocolate recipe which is something I have been guilty of not making in a very long time šŸ˜‰

43These are super chewy. Like melt in mouth chewy. Have no processed sugar and get main sweetness from bananas. These are super awesome and are perfect for on the go power hits – YUM šŸ˜€

And these are also perfect for using anything up in the pantry – totally flexible!

Healthiest Sugarless Chewiest Muesli Bars
Source: Original Recipe by Choc Chip Uru

Makes: Roughly 12 bars

Ingredients

  • 1 cup rolled oats
  • 1/2 cup cereal/s of choice, crushed slightly if necessary (I used Cornflakes and Rice Bubbles)
  • 1/2 cup mixed seeds (I didn’t have any at home so I used more cereal)
  • 1 cup mixed chopped nuts (I used almonds – roasted, walnuts and macadamias)
  • 1/4 cup melted butter
  • 1/4 cup plain vanilla yoghurt (as fat free and sugar free as possible, this one from Yoplait is my favourite – I had to use some mango one because I didn’t have any at home though)
  • 3 generous tbs golden or maple syrup (I used maple)
  • 1 1/2 medium ripe bananas, mashed
  • 1 1./2 cup dried fruit – add in some desiccated coconut as well if desired (I used a wonderful fruit medley with dried peaches, pears, apples, sultanas and apricots – yum!)
  • 1/2 cup chocolate chips (optional)

Method

  1. Preheat oven to 180 degrees C. Grease and line a 20cm by 18cm baking tin
  2. Mix all dry ingredients together except dried fruit
  3. Make a well in the centre of ingredients.
  4. 34Combine all wet ingredients until smooth
  5. Pour into the centre and stir mixture until thoroughly combined
  6. Stir through dried fruit

  7. Press mixture into prepared tin and smooth – sprinkle with chocolate chips if using
  8. 63Bake for 25-30 minutes or until golden brown on the edges and feels a little dry to touch in the middle
  9. Let cool completely before refrigerating for an hour. Cut into squares and refrigerate for long life or in an airtight container, between pieces of wax paper.

  6. My kids and I started to enjoy these kinds of bars as a snack in the car as we’re always on the go. I have been buying them but now I should consider making them from scratch as it seems pretty easy and straightforward to make. Thank you for the recipe!
