Anyone For A High Tea?

Ok, even though the title almost gives it away, what am I posting today?

Perhaps this little party will enlighten you on it…

“Of course darling, here I am – Why, hello old chap! Blooming rotten luck getting caught in this downpour, ay? Nothing like a cuppa to warm you up though! Mildred, would you be a dear?”

“Not at all, you stay right put in the drawing room Lord Grey, I won’t be a minute! I say Harold, get Betty to light the fire will you?”

7 minutes later

“… I dare say it was just not cricket when -”

“My apologies for interrupting Ma’am but where may I place the tea tray?”

“On the side will do. Now you were saying Lord Grey…”

“Well, to be brutality honest, what I was saying no longer upholds any importance in the slightest Mildred. This jam is exceptional on this. My Prunella will simply love to have the recipe of both!”

“Exceptional – And this cream, clotted to perfection, serves as such a delicious side. I am enjoying myself immensely!”

Now surely it is obvious what I made today (photos, sides ;)). No, not jam or specially clotted cream. No, I had a small Devonshire tea party with my family today. I made scones 😀

Spiced Raisin SCONES

Served with mouth watering strawberry jam and vanilla whipped cream left over from a very special breakfast 😉

Scones are not simple – in fact that they are a lot harder than they look. An over kneaded dough and a pinch too little of baking powder can have you taking rocks out of the oven instead of soft, crumby melt in mouth wonders. Never fear, I am here to make sure that does not, will not, ever happen 😛

First up, I am sure you want the recipe. I have had this recipe for ages and finally, fi-na-llyyy, discovered where I found it over 3 years ago. I know, 3 yrs is huge!

This is the recipe. You are actually one click away from acquiring the best scone recipe in the world. No restaurant, cafe or bakery has produced more beautiful scones. Don’t believe me? Why don’t you try it out 😉

But, as you know, I have my own secrets. I like making things fluffy, soft and crumby and have done quite a bit of research into it – here is how I changed this recipe to make it a little zestier closer to the scone which should be knighted – I am not joking (notice the absence of a smiley)

  • Add 1 tsp of baking soda into the dry ingredients
  • Put 1 tsp of lemon juice with the wet ingredients – it reacts with the baking soda for a soft crumb and fluffier texture
  • This may sound a little crazy but TRIPLE-SIFT your dry ingredients – aerating is a baker’s best friend believe me 🙂
  • This may sound crazy too but use Self Raising Flour (SRF) AND 1 tbs of baking powder – can use more rise with me? If you do not have SRF, simply use the 1 tbs baking powder to 1 cup plain flour rule and add extra baking powder – works for me 🙂
  • To all healthy people, sorry but DO NOT use wholemeal flour as a sub – it does not aerate as well

  • NEVER OVER-KNEAD, STIR ETC THE DOUGH – You know rock hard scones? That is how they begin!
  • Put scones together while baking – I don’t know if this is fiction or fact but apparently this makes them rise together well – no harm 😉
  • If you are using the rolling method, never roll out too thin

  • If you are using (my) the moulding into shape method, make them small, round, fat balls for best shape
  • To all healthy people, DO use margarine if desired as there is actually no difference between that and butter
  • Use a variety of spices – only cinnamon is so out
  • You can use brown sugar too 🙂
  • I used craisins because I am to-tah-ly fashionable and a la mode with the foodie world 😛

Do you really need any more of a push? Oh right, it took me 25 minutes in all, including baking time, so can you taste your afternoon tea (or lunch if you are like me?)

  16. I love scones but not the hockey puck version. This looks wonderful & perfect timing since I’ve had a craving for them lately. Recipe I’ve concocted from a couple different ones uses sour cream & a little bit of heavy cream in them but this will be my go to recipe. Thanks for the tips but did you forget to put a “pip-pip” in the dialogue?

    As to today’s scone recipe, I really wish I had more of a fondness for sweets over savouries. I have to give away most of the desserts I make. The savouries get given away as well but it’s easier to find a good home for sweet baked goods.

    I’ve never had clotted cream. Can one make something similar tasting in the home kitchen?

      If you are having trouble giving away sweets, I welcome them with open arms, truly I am here for you 😛 – if that is an issue, I am sure if you continue reading my posts I can convert you to the dark, err, I mean sweet side!
      And I did not make clotted cream at home due to its intensive method of preparation but simple whipped cream whose recipe is linked above – it happens in minutes and all you need is a kitchen mixer 🙂

  19. I really love everything about this post. I love how fun it was to read, the tips, the recipe, and on and on. But my favorite thing about it is the idea you’ve given me to do a tea party with my oldest granddaughter. She’s 7 and just LOVES to cook and wants to me teach her how to cook some things she can make for her mom, dad, and little brother. Your scones are on the list, and then she and I can have a tea party together to enjoy them, practicing our English accents. She will LOVE it, and so will I. Thank you!

  29. As I had just watched a video of Hugh Laurie (“House” farewell party), I was able to imagine him in your little scenario and thoroughly enjoyed it. You’re so clever with words. And with scones. I get so mad when bakeries and supermarkets here in the US slather scones with frosting or white sugar granules. The way you made them, the tops unadorned and served with clotted cream and jam, is the best! I’m going to grab hold of this recipe (with your adjustments) and never let go.
