Birthday, Brownie, Crownie

You see the link? No? You will by the end of this post or my alias is not Choc Chip Uru 😉

Today is my friend, vous elle appelez (you call her) SM’s, 17th birthday. Oh my gosh, she is the first of us ALL (when I say us I mean my group :D) to turn 17. The big ONE-SEVEN. Am I getting confused with 18? No, I am most certainly not because the way we all see it, 12-16 are the fun teen years, 17 is bordering on *shudder* adulthood and then at 18… let’s not go there 😉

Anyway though, it is really exciting and while there is much teasing and punching (she gets 18 from each of us this year, one for good luck no?), there are also lots of hugs, grins, toasts, cake and presents. I like doing the last one especially 🙂

To celebrate Miss SM’s 17th birthday, I decided to make something very special, and considering that she is the first to turn 17, it had to be something mind blowing. Something creative, twisted and out of the ordinary. Oh and over the top. As you can see here, here and here to mention a few places, I always go over the top when it comes to baking for friends 🙂

brownie crownies 1SM, like every human, adores brownies. She also has a soft spot for chocolate chip cookies, another good sign of her being completely and utterly human. Not that I am suggesting that she is under some sort of test or something no…. 😉

brownie crownies 5Anyway, so I decided to put together a dessert which has become an almost traditional combination. A brownie and a cookie lovechild. Brownie and Cookie have been quite happy for a while now so they have lovechildren. Here are some happy family shots of the kids that have been taken.

And the list goes on and on until we reach the newest addiction… I mean, addition, to la famille, fit to present to SM on her 17th 🙂

The Crownie. Starting to see the link now ;)?

brownie crownies 6A mixture between cookie and brownie which is so potent, it should be only be allowed on festive occasions. This idea met me. And then it became illegal.
Made in a muffin tin, filled up to the brim, first a layer of chocolate chip cookie, then a layer of brownie. The chocolate chip cookie becomes all puffy and thick but is weighed down by an intensely fudgy brownie. The waistline goes downhill from there as you start to grab 2 or 3 more of these decadent, handheld treats 🙂

I was very very lucky (sorry SM, I cannot tell a lie :P) that while attempting to take one of these treats out of the pan, it split the brownie in half.

‘Oops, oh my, can’t give that, will have to eat it, oh well, gosh darn it’, was obviously my reaction.

Thus I give you a oozing, gooey, perfect cross section shot cause I love you guys 🙂

Now I said this was a combination of chocolate and brownies yes? Because it is my sweet friend’s birthday which makes me in a good mood, I am going to share with you my version of this amazing recipe by Chocolate & Carrots. She makes it nice. Decadent but… nice. I take it overboard. As always. Don’t try to hide the grin 🙂

The brownie recipe I have used is her creation. Intensely fudgy and very rich, I have adapted the recipe accordingly, as you will later on see in the recipe to follow 🙂

The cookie? I made up a whole batch of my secret chocolate chip cookie recipe. Adapted from many sources, a mixture of it all, my recipe is actually one of a kind. I dare you to find one like it at all. Go on then, type it into your search engine. This is a copyrighted, 100% my idea for a chocolate chip cookie recipe which is the best. I did not make it during my chocolate chip cookie baking week but compared at least 4-5 different recipes with a range of methods to it. None beat it.

And because I am feeling so happy a.k.a generous, I am revealing all my chocolate chip secrets. They do not call me Choc Chip Uru for naught you know 😉

Double Cookie Stuffed Crownies

Makes: 12 muffin sized treats

PART ONE: Choc Chip Uru’s Secret Chocolate Chip Cookie Recipe

*bold = instructions apply to crownies

Makes: 16-24 regular cookies or a little more than enough for one batch of crownies

Ingredients:

  • 130g butter, divided in 1/2, room temperature
  • 1/2 cup light brown sugar
  • 1 tbs dark brown sugar
  • 1/4 cup caster sugar
  • 2 tsp vanilla essence
  • 2 tbs golden syrup
  • 1 large egg
  • 2/3 cup SRF (self-raising flour), sifted
  • 1 cup plain flour, sifted
  • 1/2 tsp salt
  • 1 tsp cinnamon/allspice
  • 1 1/2 cups dark chocolate chips/nuts (roughly chopped Oreos – I used double stuffed)

Method

  1. Preheat oven to 160 degrees C and line two baking trays with baking paper (For crownies, grease a 12 cup muffin tin well with oil and preheat oven to 190 degrees C)
  2. Melt half the butter in a saucepan over medium heat, stirring occasionally and let it brown – when smells nutty and turns brown, immediately take off heat and let cool

  3. Place other half of butter in a bowl and beat with all sugars until pale in colour – scrape down the bowl
  4. Add in brown butter to mixture and beat until well combined
  5. Add in egg to mixture and beat until just combined
  6. Beat in vanilla essence and golden syrup
  7. Sift both flours, cinnamon, salt in a large separate bowl. Stir chocolate chips (Oreo pieces) through until coated and mixture is combined
  8. Add dry mixture into wet mixture and stir through until no streaks of flour remain

  9. For crownies, place 1 ball of dough slightly smaller than a golf ball into each cup and press down with hand until comes up to halfway of each liner. Cover tray with plastic wrap and set aside. For any extra cookie dough left see step 10 and 11.

  10. Put tablespoons of dough onto the baking sheet, spreading them out from each other – press down lightly
  11. Bake for 13-16 minutes or until the edges are firm and the cookie is a golden shade

  • If you are refrigerating the dough, there will be significantly less spread of the cookie so press down slightly with palm before baking
  • After refrigeration, if done for a long period of time (e.g. overnight), you may need to add 1 – 2 tbs full cream milk to make the dough the proper consistency

Part 2: Fudgy Brownie Recipe

Ingredients:

  • 70g butter
  • 300g dark chocolate
  • 100g milk chocolate
  • 1 tbs plain flour
  • 1 tbs caster sugar
  • 1/2 tsp coffee essence (or 1 tsp vanilla essence or omit)
  • 2 eggs

Method:

  1. In a saucepan over medium-low heat, melt all chocolate and butter together until mixture is smooth. Set aside to cool
  2. In a large bowl, beat sugar and eggs until pale and doubled in volume
  3. Stir flour into egg mixture
  4. Gently stir in chocolate mixture (if it has become a little hard, reheat over low heat till melted again) and essence

Notes:

  • You can use your own favourite brownie recipe in this but the intense fudginess of this particular recipe works very well

Part 3: Assembly of the Double Cookie Stuffed Crownie

Extra Necessities:

  • 1 packet Tim Tams or your favourite available biscuit besides Oreos :), cut into thirds

Method:

  1. Preheat oven to 190 degrees C
  2. Fill each muffin hole up to halfway with the chocolate chip cookie dough
  3. Place a third of the Tim Tam into the middle of each hole

  4. Spoon the brownie batter generously into each muffin hole, ensuring that it covers the Tim Tam – do not worry if it reaches the top, it will not overflow – smooth the tops

  5. Bake for about 15-20 minutes or until the a skewer inserted into the brownie comes out with gooey crumbs (go for 15 mins)

Notes:

  • You do have to make Crownies double cookie stuffed – instead of a Tim Tam, place a caramel or Nutella; instead of a chocolate chip cookie dough, use a chocolate cookie with blondie on top etc.
  • I accidentally had the temperature preheated at 230 degrees C (yes I am crazy, what of it) so had a momentary heart attack when I discovered the muffins had been in there for 7-8 minutes – all good though, I took them out and they were perfectly fine 🙂

I like your idea of the crownie and it’s so cute b/c the shape actually resembles a crown! Good for you for coming up with your own ccc recipe! Bravo! I have my own unique favorite but I can’t claim it’s my invention, I ripped it off a friend’s creativity-haha! Mine has brown butter too, don’t you love that flavor? If you let it cook longer, it will turn a caramel color and the solids will separate and turn chocolate brown–that’s when it gets reaaaally good. I think you’re trying to kill me with these decadent treats. I know I will be dreaming about them tonight. ❤

  37. Ok that is it, I will gather my partners in crime and we are going to hit the road and raid your place. You say that these were given as a gift, but I know you have oodles of chocolate deliciousness in your house. We plan to relieve you of your chocolate hoard because therapy is not working with you. It will not be easy, because with the sugar rush I know you sleep with one eye open, but I think as a group we can handle it.
