UPDATE: I am commenting on all blogs but it does not seem to be appearing yet when I go to comment with the same one, it tells me my comment cannot be duplicated – but it isn’t there. If you could help would be fabulous!

I am not a space-head, astronomical genius with physics down pat in my head or with the Doppler Effect ingrained in my brain – not matter how much I love watching Big Bang Theory!

No, it is true, I am not BUT I most certainly do know when the universe is folding into itself, when the fabric of time is being ripped and in general, when the cosmos is collapsing.

Why? Because I watch Dr Who and have met the Master I did something today which may just change everything. I don’t know what made me do it!
Stop shining that light in my face officer!

I don’t know what happened really, honestly, you have to believe me! It was a casual lazy Saturday, simply lolling around at home when I opened some random magazine. And then it fell out. Called to me, sang to me until I knew I had to make it, feast on it, post about it.

If you must blame anything blame the magazine. It was shameless, and I got hooked. I had to make a split decision and I chose the right one but at a cost.

I know, it will be in the newspapers, I know I have basically put all those around me in danger but it had to be done. You don’t understand! Let me show you why… please give me a chance – I have no doubts you would have done the same had you been in my position.

*Whispers* I, Choc Chip Uru, lover of all things sweet, chocolatey and full of sugar, made 2 savoury recipes in the same month…

Oh yea, if you take a bite šŸ˜‰

This Bruschetta is a hybrid. Part pizza, part bread and a whole lot of delicious. Melted pizza cheese, a mix of the stunning mozzarella, parmesan and some other cheese I probably can’t pronounce properly. This sits on a bed of delicious olive oil-garlic powder pastes. And is topped by the star.

Roasted Romano Tomatoes.

A recipe for roasted tomatoes had me throwing my ice cream cookbook aside. So judge me.

If you could have (and some of you would have) seen the picture of those tomatoes, you would understand. Instead you will have to make do with mine šŸ˜‰
These tomatoes are soft, slightly charred with a gorgeous aroma which reminds me of being in Italy (leaving out the fact I have never been in Italy :P)

Crusty sourdough, a topping made to kill, life truly does not get any better than this Bruschetta.
The cosmos fell for this bread. And it was worth every minute šŸ™‚

Just before I give you the recipe, I just want to give a little shout out to Aunty M. I can’t even express how thankful I am to her because she made me the most stunning personalised apron.

Roasted Roma Pizza Bruschetta

Part One: Slow Roasted Roma Tomatoes

Adapted from: Woman’s Day

Ingredients

  • 9-10 Roma Tomatoes, washed and dried (make sure they are firm)
    bruschetta a
  • Olive oil
  • Salt and Pepper
  • 4-5 Garlic cloves
  • 1 large Spanish onion
  • Italian mixed herbs (or replace with sprigs of herbs such as shredded basil, thyme and oregano)

  • 1 large chilli or 2 small

Method

  1. Preheat oven to 150 degrees C
  2. Chop up tomatoes into 6 long pieces each
  3. Crush each garlic clove and cut in half (but do not peel)
  4. Peel and roughly chop onion

  5. Cut chilli/s in half
  6. Arrange tomatoes in a lightly oiled baking dish
  7. Scatter evenly the roughly chopped tomato and garlic around the tomatoes
  8. Generously (but do not overdo) sprinkle the salt and pepper all around as well as the herbs
  9. Place chilli halves around the tomatoes

  10. Drizzle generously with olive oil and bake for 1 hr – 1 1/4 hour until slightly charred and soft
  11. Let cool and store in a sterilised glass jar, covered in olive oil

Part Two: Assembly

Ingredients

  • Crusty white sourdough bread
  • Olive oil
  • Garlic powder
  • Pizza cheese (mix of Mozzarella and Parmesan mainly)
  • Slow Roasted Tomatoes
  • Herbs (to garnish)
  • Shaved parmesan (to garnish)

Method

  1. Preheat grill to low
  2. Drizzle a bread slice with olive oil and spread using the back of a spoon
  3. Sprinkle lightly with garlic powder, spreading into the oil
  4. Generously sprinkle with cheese

  5. Place in grill for a minute, then place roasted tomatoes on top and grill till cheese is melted and bread is nicely browned (do not let the tomatoes burn, try to keep them as far away from direct heat as possible)
  6. Serve on a plate and garnish with extra herbs and shaved parmesan if desired šŸ™‚

I can feel my long-lost buried Italian love thrumming away in my bones no doubt – this was gorgeous! Who needs just bread or just pizza when you can have both no?

  11. Nothing wrong with savories; Gotta balance out the sweets to stay inspired. Those tomatoes look -so- luscious, I’m dying to chomp right into those bruschetta. I may just have to make roasted tomatoes alone, though… Not sure I would have the patience to do much more with them once they come out of the oven!

  18. You and BAM have a way with bread, tomatoes and olive oil, CCU! This sounds yummy and you’re allowed to deviate from the glorious goodness of chocolate once in a while. Your comments on both my blogs (most recent entries) came through just fine.     I have the same problem when commenting on some sites. It can be frustrating.
    As for the Big Bang Theory – I am SUCH a fan! I have 3 tee shirts: 1 = Bazinga! 2= The no. 73 and the 3rd is a paragraph on a comment bouncing back and sticking to the person who made it but in Big Bang “Sheldon” speak šŸ™‚ I know you know what I mean. šŸ™‚

  33. I’m not sure I understand the problem. Hope they fix it for you. Sometimes I’ve not been able to comment on certain blogs, no matter how hard I try. Tasty! I love the extra light olive oil. I make healthy butter with it. 4 sticks butter, 2 cups olive oil – blend it together and you have something that tastes like butter and spreads like margarine straight out of the refrigerator. We cannot live without it. šŸ™‚
