My… sniff… last post…

What can I say my friends… we have had a good journey. I thought perhaps I was ready to handle it all, honestly, the blogging, school, my friends, my family. I was even combining them!

A couple of weeks ago my parents and sat down. Serious faces on (wow, it is hard to joke right now), they told me carefully how they thought blogging was affecting my schooling, how there was always time for this later on. I mean, (hopefully) I have a long life ahead right? During Uni, they said, I would have more time to constantly do what I want, not tied down by algebra and calculus and five essays in one week.

What could I say when they were right? I was feeling the pressure build as my blog progressed, and I suppose school started to want to become a second priority almost. Who can say blogging was not more fun?

I don’t want to go, it genuinely hurts to just throw away so much that has been building, and soon, it would have culminated into a year’s diary of my baking. I think I will feel lost almost, coming home not to so many wonderful blogger posts but to watching random TV, mindlessly trawling through Facebook, and just casually sitting around reading books I have already read. And of course working. *Sigh*

So, it is indeed with a heavy heart I say goodbye. I hope to continue to comment, please don’t think I want to completely lose all of you who have become a second family, people I can trust and who appreciate this passion which brings us together. It is just, a blog is much too much and I can’t help but feel it will overtake my studies.

I am so sorry everyone. I guess you will see me in 4 weeks after my yearlies.

Of course I would never leave! I am here to fatten you up (not really, exercise is encouraged!) now and forever 🙂 🙂

I have made these before, you literally cannot see their goodness and I spiced them up a little bit (or should I say salted?) so they are even more delicious than before!

The cookies are soft and chewy and the brownies become fudge-like inside. The saltiness mixing with the caramel and chocolate flavour also takes them to a whole new level so if you don’t want to lose the delicious salty flavour by not adding chips, add in some sea salt 😀

Sweet & Salty Brookies

Makes: 8 HUGE cookies (the size of your palm – or my palm which is embarrassingly big ;))

Ingredients

Method

  1. Preheat oven to 170 degrees C. Line 3 large baking trays with baking paper
  2. Make a batch of brownies, adding in chocolate chips instead of nuts if desired or leaving plain
  3. Let cool and cut into bite size pieces (I cut mine triple that and it worked a charm! I got hude biscuits) – Refrigerate till needed.
  4. Whip up a batch of the cookies, leaving out the chocolate chips and nuts and replacing them with 1 1/4 cup caramel chips and 1/4 cup crushed chips (you can balance this out the way you want :D)

  5. Refrigerate dough for 20 minutes or until less soft and easier to handle
  6. Get a large chunk of cookie dough and indent the middle. Squish in the brownie slightly.

  7. Getting a slightly smaller chunk of cookie dough, place it on top and meld the sides together till it forms a ball.

  8. Repeat with remaining dough and brownies
  9. Place well apart on the baking trays and using the palm of your hand flatten them all halfway

  10. Refrigerate the balls not going in to bake (I baked two at a time 😀 and 4 on a huge tray)
  11. Bake for 15-18 minutes or until golden and brown around the edges.

  12. Let cool on the tray for  10-15 minutes or until cool enough to take off sheets and let cool completely on a wire rack.
  13. Store in an airtight container at room temperature, eating a lot little at a time 🙂

I’ve realized that my parents were always right (even though what they sometimes said hurt or didn’t feel right at the time!). If I were still a student like you, that would be tough to give up…but then I know that I’d have to so that I can enjoy the journey of being a student.   29. So many thoughts! First off, these cookies sound like a dream come true. They’re similar to the compost cookies I made, but souped up and STUFFED WITH BROWNIES! Drool. Secondly, I will miss your regular posts, but I totally understand! I’ve gone through spurts of the same thing. There are only so many hours in a day and sometimes you have to put something aside to focus on what is important at that time. And now as a parent myself, I think your parents are right. If you do well in school, you will gain more out of it for the future path. I’ve known some bloggers who were gone for like nearly one year, but came back VERY strong. So don’t worry. There will be always readers, and we’re here too when you are back. Look, I’m 35, almost 36 and started to blog 1.5 year ago. Your few years in school goes by quickly and you can focus on your blog much better too when you don’t need to study anymore. 😉 You are a bright girl and deserve the best!   42. Learning how to balance life’s demands and joys is one of the most important life lessons to absorb. After school, balancing family life, children – if you have them, work, and your own interests is an ongoing challenge. I’m at the other end now in retirement, and I STILL have to focus on balance.     Also, university? WAY hard to juggle everything. I try, and it kills me inside. Maybe because I’m taking 6 courses, 2 of them graduate courses, teaching a workshop, tutoring, and working. (whoa.. 3 jobs? no way.) I may also be MIA a lot come September..

    Although your parents are obviously very wise, I think there is a lot of skill involved in writing a blog, taking photographs and research dishes. It is certainly more than most teenagers are doing in their spare time. I am pleased you came up with a compromise 🙂

    You poor thing, but as a parent I would have to agree with yours. I always tell my girls school comes first. As for the blogging, trust me it will be here when you come back. One thing you have to come to accept if you want to write for years to come is that you control the blog, not the other way around.

    We will all still be here when you return so don’t worry. Focus on school and having fun with friends instead of typing away.

  104. As one who has “had the talk” with my parents back in high school, I know you know when they’re right. I did wonder how you could do all that you were attempting with your blog as well as keep up with your family and friends and study and go to school and help out at home.. The mind boggles.
