Hello to all of CCUโs readership!ย This is Ames from โa Melbourne girl at heartโ!ย I chose to name my blog as such because being born and raised in Melbourne, itโs the city that will always be apart of me and itโs something that would never change no matter what life throws at me :).ย But this blog isnโt about me so letโs get on with the recipes (that rhymes hehe)!
So, my hope is that by the time this post gets posted, Iโll have already began cooking through Donna Hayโs โfast, fresh, simpleโ cookbook.ย I first fell in love with Donna Hayโs way of cooking when her show, โfast, fresh, simpleโ was televised on one of our cable TV channels.ย With all the commitments that need to be juggled, I often donโt have the time or energy to do as much cooking as I would like.ย However, after watching a number of episodes of Donna Hayโs show, I thought, โHey, it doesnโt actually take that long to cook yummy food!โย Hence, when Book Depository had their 10% off sale, the first thing on my list was to purchase that cookbook!
Since I know CCU has a sweet tooth, I thought Iโd share two short, sweet and simple recipes that weโve made in our household from Donna Hayโs โfast fresh, simpleโ show (which also features in the cookbook of the same title).
Note: please excuse the dodgy photography โ this was before I started using a DSLR ๐
#1: Macaroon Ice Cream Sandwich
Serves: 6
Ingredients:
- 2 egg whites
- ยฝ cup (110g) caster (superfine) sugar
- 2 cups (160g) desiccated coconut
- ice-cream, to serve
Method:
- Preheat oven to 160ยฐC (325ยฐF)
- Place the egg white, sugar and coconut in a bowl and mix to combine
- Line baking trays with non-stick baking paper
- Place an egg ring on the tray and fill with 2 tablespoons of the mixture
- Press with the back of a spoon to flatten and remove egg ring
- Repeat with the remaining mixture
- Bake the macarons for 10โ12 minutes or until a light golden colour
- Cool on trays. To serve, sandwich the macarons together with your choice of ice-cream
#2. Cheat’s Chocolate รclairs
Serves: 12
Ingredients:
- 1 cup (250ml) double (heavy) cream
- 1 teaspoon vanilla extract
- 1 tablespoon icing (confectionerโs) sugar, sifted
- 12 sponge finger biscuits, halved lengthways
- 125g dark chocolate, melted
- ยผ teaspoon vegetable oil
- Place the cream, vanilla and sugar in a bowl and whisk gently until thick
- Place the bases of the biscuits onto a chopping board (Donna Hay suggests wire rack but we didnโt have one handy at the time)
- Spoon on the cream mixture and top with the remaining biscuits
- Mix together the chocolate and oil.
- Spread chocolate mixture over the tops of the biscuits

Chocolate eclairs were a favourite of mine when I was growing up. If I ever walked into a cake shop, that is what I’d buy. I think I’d have to start with making these cheat’s eclairs. And don’t we all love Donna and haven’t we all benefited from her cookbooks xx

Two amazingly tasty desserts that don’t seem TOO difficult to put together with a few ingredients.
The macaroons especially were a revelation. It gave me the idea for a strawberry shortcake type presentation … drizzle some strawberry puree on a plate, fill the macaroons with sliced macerated strawberries, and decorate with a whole partially sliced strawberry and whipping cream. Very grownup and fancy. ๐
