So I had quite a bit of free time lately, god knows how but I am not going to question it, and it gave me time to contemplate the important things of life.
Then I looked at my clock and only 10 minutes had gone by, though in my thoughts it had been hours. Cool 🙂
So then I started to contemplate ridiculous nonsense scenarios, events and general craziness which, I don’t know about you, always seems to take up the majority of my day dream sessions 🙂
As part of this general craziness, I often go through random topics… I am not even kidding you, it is like I am a human Wikipedia, starting on the topic of war trench-fare and eventually linking and linking to end up at potatoes. Honestly, that is how it happens 😛
So anyway (there I go off again on a tangent!), in this particular daydream session, somehow I got to thinking of spam. And no I am not talking about this spam (Tell me, how can something look so processed that it may as well be plastic?!)
I am talking about this spam…
Now like many of you, these are my multiple reactions whenever I go to my email OR my blog, considering spamming comments are all the rage these days…
But I then I started thinking… what if a Nigerian prince of unknown origins really did need my help? Can you not imagine it? Him, stuck under his evil uncle’s thumb with his country in peril… and you are who he turns to 😛
Or moving away from the multiple princes out there, imagine if a hi-fi publisher truly does want to have investment talks with you? A multimillionaire thinks you would be perfect for the job, all you have to do is organise a meet up. Just press that link and your future unfolds before you…
Ooooh or I could meet the perfect man for me. I mean, he is just a click away, photo is there and he comes with free tickets to a coldplay concert? Come on guys, such a keeper – two for one kind of deal right here! 😉
And suddenly I realised I had day dreamed for an hour already…
So yes, spam may perhaps be the most ridiculous thing in the history of the internet, but it certainly does provide good material for daydreaming 😀 – and while I did not learn any maths or history during this time, I did learn a very important lesson for life… obviously 😉
Daydreams are also really important for me as a way of coming up with new recipe ideas. One such actually came to me because I couldn’t find pureed pumpkin – BOOOOO 😉
I looked out my window and saw sun, blue skies and a shimmering heat which warned me of the onslaught of summer to come. And of mangoes. So many mangoes. Mangoes after mangoes after mangoes. With some mango on the side.
So I decided to do what was smartest. Use mango instead 😀
Let me tell you guys something. Mango and cinnamon are a match made in heaven. Neither are they star-crossed nor are they prom king and queen, rather, this pair is sitting in the corner, talking and enjoying each others company away from the public. Until someone notices them. And guess what guys. I just happen to be the paparazzi. Sorry pumpkin, you should have come and claimed cinnamon for yourself 😛
These pancakes honestly, softer and fluffier than ever, are bursting with mango flavour. When I say bursting, I honestly mean from the seams. And then there is that cinnamon swirl. It just compliments the mango flavour so well, you will collapse. No, legit, would I lie to you? 🙂

Mango Cinnamon Swirl Pancakes
Source: Adapted from my Banana Bread Pancakes
Ingredients:
Pancakes
- 1 ½ cups SRF (Self Raising Flour)
- 2 tbs brown sugar
- 2 large mangoes or 3 small ones, very ripe
- ¼ tsp baking soda
- 1 tsp allspice
- 2 tsp vanilla essence
- 1 egg, lightly beaten
- 1 ½ cups full cream milk
- 40g melted butter + extra to grease pan
Cinnamon Swirl – Taken from here but I would not use it if I wanted to keep a design on my pancakes, which I assumed would happen but it didn’t because this recipe is a little too runny – at least in taste it delivered like crazy
- 2 tbs unsalted butter
- 2 tbs maple syrup
- ¼ cup + 2 tbs packed brown sugar
- 1 tsp ground cinnamon – I made it 1 tbs 😀
Method:
- Mash or puree your mango well (though a few lumps never hurt anyone :D)
- Mix together the milk, mango and sugar and essence in a bowl and let sit 5 minutes
- Sift together the SRF, baking soda and allspice
- Add melted butter than egg into wet mixture and combine
- Make a well into the centre of the dry ingredients and pour in the wet mixture
- Mix gently until combined (lumps are fine) and let sit 5 minutes
- Make Cinnamon Mixture: Mix all ingredients together and pour into a squeezy bottle 🙂
- Heat a large nonstick frying pan over medium heat. Once hot, lightly grease with butter
- Briefly stir batter in case it has settled and scoop 1/4 onto the pan, smoothing with a spoon into a circle.
- Using the squeezy bottle, make a swirl on top
- Flip pancakes when first bubbles start to appear all over the surface (1-2 minutes) before carefully flipping until lightly browned
- Place on a wire rack and place a tea towel over to keep moist and warm
- Grease in between each pancake and continue process (You may need to reduce the temperature a little after the first 2-3 pancakes)
- Serve warm and with homemade vanilla ice cream 😀 (I would say maple syrup but the cinnamon filling is more than enough 😀
Right away I assumed you were talking about the Hormel variety of spam. Probably ’cause I used to (long ago!) eat the stuff. Now just once a year or so, for old times sake. I’d much rather eat your mango pancakes with ice cream, CCU. Sounds scrumptious.

Mango pancakes are a favourite at my local yum cha! To have cinnamon kick is a lovely way to change up the flavours too. I shall wait until I get my hands on a few of those golden treasures, can’t wait for the tropical fruit seadon!

Uru, I love mangoes so much that I’m a mango purist and can never bring myself to do anything but eat them straight but this is the first time I’m actually tempted to try a recipe with them. It was your description of the mango flavor “bursting at the seams” that sold me. So I”m pinning it. Maybe when I have a surplus of mangoes I will bust this recipe out. And BTW, glad you found a use for Spam. Just glad it’s not the meat log variety (barf). lol 😉

I rarely have anything sweet for breakfast/brunch (yogurt doesn’t count in my book) though my nephew made me pancakes one day while taking care of me recently post surgery. The combination of mango-cinnamon is a very interesting one that I’d never have thought of. You’re so inventive. 🙂

Ha I thought you had gone off and started to make spam fritters – yes my friend this is what they considered lunch at schools in Britain (in the deep and distant past) and I was gripping the laptop with memories of a grease filled mouth and hoping you’d get off the subject and quickly !!
Phew Mangoes 🙂 Now that’s better, much better. I could eat my fill of these, and who would have thought that a touch of cinnamon would be a perfect partner? Only you my baker friend !!
