Unable to Write…

Hi…. You may be wondering about the title. Well really quite self-explanatory if I do say so myself. After this little postscript you will not be hearing from me today, though I had such a fun post planned! You see, I have spent my entire weekend trying to write up an essay which is doing a good job of kicking my butt. Big time.

That is way too many hours spent frantically trying to piece together non-existent analyses of texts and failing at it. Still. But because of that I just want to forget all words and simply show you lots of visuals 🙂

Have fun with this slice mes amis – it is soft, moorish and absolutely stuffed with coconut 😀 oh and involves crumbly shortbread and delicious delicious GORGEROUS strawberry jam…. 😀

A recipe that takes about an hour to make yet a minute to devour 😉

Coconut Jam Slice
Source: Mastering The Art Of Baking

Makes: 12 slices

Ingredients:

Slice

  • 150g plain flour
  • 75g self raising flour (SRF)
  • 60g icing sugar
  • 150g chilled butter, chopped
  • 1 egg yolk
  • 1 tsp vanilla/coconut essence
  • 165g strawberry/raspberry/your choice jam – I used lumpy fruity jam… don’t 😉 – try and find lump free if possible!

Topping

  • 110g caster sugar
  • 3 eggs, room temperature
  • 270g desiccated coconut, toasted – I only had 170g so mum had the bright idea of simply blending up shredded coconut – you would not even know the difference!

Method:

  1. Preheat the oven to 180 degrees C and brush the sides of a shallow baking dish with melted butter or oil. Line the sides with baking paper so it extends over the sides slightly
  2. Put the flours, icing sugar, butter, yolk and essence into a food processor.
  3. Pulse until the dough starts to come together (it will be soft and sticky)

  4. Turn the dough out onto a lightly floured work surface and press together until smooth
  5. Use your fingertips (I dipped mine in flour to prevent stickiness) and press dough down evenly into the prepared tin

  6. Refrigerate for 10 minutes and then bake for 15 minutes or until golden brown and cooked through. Transfer to a wire rack to cool to room temperature (I was in a little bit of a rush so did not wait to cool down completely – the jam got a little sticky and all but otherwise it was ok :))

  7. Spread the jam evenly over the cooled slice base in the tin

  8. For Topping: Put the sugar and eggs in a medium bowl and whisk until pale. Stir in the coconut and the spread the topping evenly over the jam

  9. Press down and spread evenly using a spoon
  10. Bake for 20 minutes or until the topping is light golden

  11. Transfer to a wire rack to cool in the tin – Cut into squares or fingers and serve 🙂

Now personally.. I do not want to see a computer as long as I live 😉

  2. Gosh, these look almost like a lamington, but without the chocolate glaze. Hehehe.. The cake looks so fluffy and with jam, is simply yummilicious. I have been having a block in my mind, I know I have got tons of ideas, but can’t seem to implement them.. I hope I will figure them out real soon :P. hugs, Jo

    I have been going through a writer’s block of a sort myself, but for different reasons..like I literally cannot think of anything to write..so I also piece together what I can as best I can on my blog. I need to just do a few wordless posts, I think lol That said..these coconut jam slices need no words at all! They more than speak for themselves!   5. I know school is such a drag , it real puts a hamper on our social lives!!!! Really does your school not know that the world needs to know about your baking and they are really cramping the style of the whole foodie community. LOL Just think of essay as if though your writing on your blog and let the words flow… You can do it.   7. I feel ya, Uru. I was in post-secondary for 9 years and spent many a sleepless night cramming together an essay at the last possible minute. You can do it, girl! And this cake looks amazeballs – my Husband walked past me as I was looking at the pictures and he literally stopped in his tracks to ooh and aah at your photos 🙂

  8. Good luck with your essay CCU. In my second year at uni, about a billion years ago, I wrote my essay weeks in advance (I hated leaving stuff to the last minute, still do) but then on the day it was due, I forgot the damn thing at home so I had to drive 45 minutes back home to get it. Fortunately my Prof knew me very well so he believed my silly story.
    Nice little dessert bars. Now get back to work!

    You are not the only one because I can stare for hours at the screen and still be in the same spot. Its sometimes very difficult for me to write the intro and I think in the future If I can’t, its going to be one or two sentences only.

    Shredded coconut is perfect, I used them all the time compared to the dessicated. I love any desserts with coconut and this looks like one that I will not want to miss out.

  14. Yum – I like what happens when you get writers block. These visuals of coconut jam slices would get an A+ from me.

    As you seem to lean towards visual, have you tried mind mapping – a visual way of sketching out ideas. It worked wonders for me when I was in the essay-writing business. Just a thought…

    ccu…I understand so well! I have all but disappeared from blogging recently to finish a paper. It is good to focus on your studies and put all of your energy into them to finish this paper. I know you will do well, you have a gift with words and I am sure they will come to you!

  17. CCU, my first impression was that words fail you in face of this masterpiece of baking. Others seem to have the impression it’s words for a school essay that elude you. Whichever… take another bite, or two, and sit back. The universe will inspire you, again, in whichever way you need.

    Uru, I have a feeling you write as well as you bake (!), but both require a lot of work and it’s understandable that you want to pitch your computer out the window now and then.     I’m sure I used to make something similar to this when I was younger called Louise Slice. It had the base, the jam filling but a meringue and coconut topping. This looks wonderful. So sorry to hear of your essay dramas. Not good! You will be so relieved when the Christmas break begins xx
