Happy Mother’s Day 2013

Dear Ma,

I love you. Happy Mother’s Day. I know I can’t sing in front of people yet but I hope you like this recording. I know you want to hear me sing so that is my gift to you. I hope you get my message and just how much I appreciate everything you do, be it stuffing chia seeds down my throat or bringing me tea and biscuits when I am sick 😉

Did you hear that little voice shouting in the background at the end? Haha, that was my mum asking me for dinner, how ironic is that 😉

Two of my friends had this idea to change the lyrics of a small part of One Direction’s song Little Things (a song I personally love!) to make an apology and this sparked the idea for my mum’s present! Not an apology but I wanted to change all the lyrics to showcase my relationship with her 🙂

Now, I know the world is divided into Directioners and Directionaters, but you have to appreciate how gorgeous that song is! Which made it perfect for the occasion 😀

Please ignore my singing, haha it was to get a message across. As special as you should treat your mum everyday, today put in a bit of extra effort. Skype for a while longer, go out to lunch, or just sit down and think about her.

If you are like me, then why not bake something? Albeit, I baked this for her party but it would be perfect for Mother’s Day. Why?

  1. It tastes heavenly – I legitimately mean angelic
  2. It is pink – colour of the girl and all that 🙂
  3. It is soft, spongey and has mousse involved – creamy awesomeness!

Lime Macaroon & Strawberry Mousse Cake
Source: Mastering The Art Of Baking

Ingredients:

Macaroon:

  • 4 egg whites, room temperature (mine were not but it was fine 🙂)
  • 170g caster sugar
  • 1 tsp strawberry essence
  • 140g almond meal, sifted
  • 35g plain flour, sifted
  • 2 tsp lime zest
  • 1 tsp lime juice

Strawberry Mousse:

  • 600ml thickened cream
  • 180g white chocolate
  • 250g strawberries, washed and hulled – I used 300g frozen, thawed to room temperature overnight
  • 2 tbs strawberry jam
  • 1 tbs powdered gelatine

Extra:

  • 100ml thickened cream
  • 1 tsp vanilla essence
  • 95g flaked almonds, lightly toasted (in the oven at 180 degrees, tossing occasionally for 10-15 minutes)

  • Strawberries and icing sugar (and mint) to garnish
  • 6 tbs strawberry jam

Method:

  1. Preheat oven to 180 degrees C. Grease and line two 22cm springform cake tins with non-stick baking paper
  2. Use an electric mixer to whisk egg whites till soft peaks form. Gradually add in sugar, whisking continuously and well until the meringue is thick and glossy (rub a bit between your fingers and it should not be grainy)
  3. Whisk in strawberry essence
  4. Combine the almond meal, flour and zest in a large bowl
  5. Add in the meringue mixture and combine with a large metal spoon careful

  6. Divide between tins, smooth surface and bake for 15-18 minutes or until lightly browned

  7. Cool in tins, covered with a tea towel to ensure it does not dry
  8. Bring 125ml of the 600ml of cream to simmer in a small saucepan
  9. Remove and add in the chocolate. Set it aside for 30 seconds and then stir until melted – Set aside for 30 minutes to cool
  10. Process the 2 tbs jam and strawberries till liquidated in a food processor

  11. Push through a sieve and discard of seeds and lumps
  12. Sprinkle the gelatine over 60ml of warm water and set aside for 5 minutes to soften
  13. Stand jug in a small saucepan filled a 1/4 way with simmering water. Heat gently till the gelatine completely dissolves
  14. Whisk the remaining cream from the 600ml until firm peaks form
  15. Fold into the cream the gelatine, strawberry and chocolate mixture until just combined

  16. Remove one macaroon from its tin (flexible and sticky and soft)
  17. Spread the other macaroon still in its tin with the remaining jam generously
  18. Pour mousse on top and evenly spread

  19. Top with the remaining macaroon. Cover and refrigerate for 3 hours or overnight.

  20. Whip the extra 100ml of whipped cream with vanilla essence till it forms firm peaks – refrigerate until needed, covered

  21. Remove the cake from its tin and spread a thin layer using the pre-whipped cream around the sides (not on top)
  22. Cover the sides with crushed, toasted almond flakes
  23. Dust with icing sugar and (since I did not have fresh strawberries in season, I improvised) refrigerate until ready to be enjoyed!

I also think that song is particularly poignant and beautiful, whether you are a One Direction hater or lover it doesn’t matter the song is meaningful and gorgeous.     How lucky is your mum ?! What a sweet thing to do in every sense of the word. I am so sad I won’t be able to give my mum a big hug for Mother’s Day tomorrow but big love to all the mum’s out there tomorrow ! I hope you all are spoiled rotten by your loved ones.
