Dear Class of 2013
I do not know all of you. To some, I did not know you at all, apart from a face and a name. And now, at the end of it, I’m sorry that I was too shy or didn’t put in the effort to get to know more of you. But during graduation week, honestly, I felt like that all melted away and I’m really thankful to all of you for making my last week at our school so wonderful! 🙂
Whether it be jigging class dressed as a transvestite or attempting to pretend nonchalance while holding your breath in your junior uniform, when we were together a grade, it made it all the more fun, and all the more memorable 😀
You made water fighting the most awesome-sauce pastime in existence and honestly, because of you all, graduation was brilliant and post-grad even better 😀
It’s surreal feeling, knowing we as a grade, will never fully be together again, and I feel a little weird about it. As much as I’m not going to miss our puke-ish uniforms (girls you know what I’m saying!) or the bells or the rules, I’m going to miss us. Our grade, the grade that was so vibrant, so crazy and so loved 🙂
The reputation of our grade was just… nuts. Actually. I wish I could use bette words but I really can’t lie when that was it 😛

You could say that as far as a farewell letter goes, this is quite short, not a dramatic, personalised goodbye as many wonderful people in my grade were able to write and you may say that it is a little rich that my excuse is that ‘I’m not good with words’ considering I write a blog…. #hypocrite #contradiction
But it is true! Sappy, I’ll miss you forever writing does not come easily to me. Gosh, if I am being honest, birthday card writing, getting all personal is difficult to me. I express my love, my friendship better in gestures like hugs. Lots of hugs. 😀
And baking 😉
So during the last two weeks of school, I made 2 batches of brownies as a way of saying goodbye. Beautiful big fudgy brownies. But I have made big fugby brownies before right? Well these were different but equally as delectable 😀
Secret ingredient? Marscapone.
Oh. My. God.
Thank you Italian people all over again 😉
And the berries? It is like little pops of tangy deliciousness which come up unexpectedly in the rich, decadent treat!
Super successful brownies for my grade, whom I know will go far 🙂 – Just you wait and see!
Berry Marscapone Brownies
Adapted from: Kitchen Riffs (You rock John :D)
Ingredients:
- 1 1/4 cups self raising flour
- 113g salted butter
- 6 eggs
- 2 tsp vanilla essence
- 1 cup brown sugar
- 1 1/2 cups caster sugar
- 250g marscapone cheese
- 1 3/4 cups cocoa powder
- 2 cups chocolate chips
- 1 cup frozen berries
Method:
- Preheat oven to 170 degrees C – butter and line a 9x13inch baking dish with baking paper
- Sift flour into a large bowl
- In a saucepan, melt butters and sugars together (the butter takes longer, so the sugar caramelises around it)
- Let butter cool for 5 minutes before beating in one egg at a time with a handheld mixer
- Beat in vanilla essence and marcapone
- Sift in cocoa powder and stir with a large metal spoon till mixture is glossy and chocolatey smooth
- Add in flour and mix until just combined
- Toss in the frozen berries and chocolate chips and combine into super thick batter
- Pour batter into prepared dish and bake for 25-30 minutes (mine were underbaked a little in the middle since I took them out at 23 minutes, so keep for another 5 minutes if necessary) – insert a skewer and sticky crumbs should come out 🙂 and the brownie should start cracking
- Remove to cool on a wire rack… if you can 😉

Awesome achievement! Woop! I can’t believe how much you’ve achieved for someone so young (yet so mature, in lots of ways). I graduated in 2000 which means it’s 13 years this year since I left high school. Gulp. I sound old. Anyway, back to YOU and these gorgeous brownies. Ooh, I like the idea of marscapone cheese! Yum! I love that stuff. And congrats girl!! I understand your feelings- when I graduated it felt kind of awkward. Like I was excited but it was kind of sad to think of all the people you would probably never see again. It obviously shows that they are not the biggest part of your life but I still had a lot of memories with people especially playing on lots of sports teams. Enjoy being a graduate and hopefully some new freedom! 🙂

High school graduation was so bitter sweet for me. I was sad for weeks after, I missed my friends and felt so lost in such a big world. Seven years later and the sadness is gone, I have wonderful new friends, and I am still lost..but know that I have a path! Congratulations on all your accomplishments, and cheers to many more!

Congratulations on the graduation and kudos on the generous gift of brownies. Mascarpone is a wonderful cream cheese and now that I’ve finally made cannoli with ricotta cheese, I think it’s time to FINALLY make tiramisu with mascarpone. It’s a pricey ingredient and I want to make sure that I get the biggest bang for my mascarpone buck … though your brownies aren’t a slouch in the decadent of mascarpone use department. 🙂
