Holiday Post #1: Rocky Road

This week, I am cruising (quite literally) in the Caribbean, enjoying the Pirates (Jack!!!), the rum and the wonderful feeling of having every luxury designed by man at my fingertips 🙂

I can see the sunsets, the sunrises, in all their peachy glory and I despite writing this in advance, I already know that the atmosphere is making me giddy, while I drink my Pina coladas and what not 😉
But I will of course, tell you more when I come home!

At the same time, I refuse to neglect you all in the blogging world completely because I am holidaying it up in Barbados! I may not be commenting on your blogs, but I still want to share recipes that I made from ages ago, but never posted up. Since Christmas festivities are growing, and the mood is coming, I thought I would share the xmas sweets, the recipes to be given as gifts, or to leave out to Santa, because he is such a cutie-patootie!

Rocky Road.

I do not know who invented this genius creation and thought ‘Hmm, let me mix things through melted chocolate!’ – simplicity equals genius, it is just so obvious here!

That first bite when the chocolate melts in your mouth, then the texture of a fluffy marshmallow hits your teeth when you chew through and then, BAM!

A peanut. A small cute nut which adds a delicious saltiness and takes the sweet treat to a whole other level.

If you really think about it, Rocky Road is so flexible. I put Turkish Delight in mine but for unknown reasons, a lot of people don’t seem to truly like this chocolate (mind-boggling isn’t it?!)

That’s fine. Put in Crunchie bar. Or caramel chips. Or anything your heart desires!

As a Christmas treat, Rocky Road is one of the ultimate desserts. Easy to package and customise according to the recipient. Good for the giver because they get to eat cut-offs 😉
Simple to make and can be made in mass!

How could you possibly go wrong with a good batch of Rocky Road?

Rocky Road 
Choc Chip Uru original

Ingredients:

  • 400g milk chocolate (or dark, or white!)

  • 200g marshmallows, roughly chopped
  • 1 1/4 cup salted peanuts
  • 100g turkish delight, roughly chopped (too much, and the jelly sweetness takes over)

  • 1 cup desiccated coconut

Method:

  1. Place the chocolate in a large glass bowl over a saucepan of simmering water, ensuring the water does not touch the bottom of the bowl (I forgot, but this method produces smoother melted chocolate)
  2. Melt till smooth on a low medium heat

  3. Wait 5-10 minutes before stirring through the marshmallows, nuts, turkish delight and desiccated coconut (Otherwise the marshmallows and turkish delight will melt into the chocolate)
  4. Pour mixture into a baking tin lined with baking paper and put in the fridge, covered in aluminium foil, till the chocolate has hardened and set

  5. Remove from the tin, cut up and enjoy all of the rocky road. In one go. Because you won’t be able to stop 😀

    A_Boleyn: Lucky you. We’ve got 8 inches of snow … Christmassy but oh so cold. The fondant fruit cake is my favourite of your recipes. It looks so elegant. As to leaving out the fudge for Santa. Well, maybe just a small piece because he’s got to go on a diet after Christmas if he eats more of that delicious fudge.
