I am in Rome. With Colosseums and cute Italian boys and fascinating sculptures and cute boys that look like them. Definitely in a wonderful place right now 😉
But seriously, even though I am writing this way before I actually go, I can guarantee that I am having the best time of my life right now, travelling with my friends and enjoying Europe to its height!

But now the time has come to face 2014 😀

New Year, new year, new year… and as such comes a basket load of resolutions no?
A list written and pinned to your bulletin board to make sure you remember what you vowed to change this year, a list sitting beside your bed for you to review each night, checking to see if you broke any of them.
Decisions decisions, but I honestly, am no longer a believer in New Year’s resolutions.
Not putting a damper on the tradition, I think it is still awesome, but I personally just don’t have the focus to follow through 😛
I feel like if a person needs to change something in there life, why wait till a big occasion. Why think your new years resolution is going to be ‘no more drinking’, if you still have six months of the year left?
I understand – a new year symbolises a new beginning, and a chance to enjoy a fresh start, but I cannot help but think that it is still only one day – perhaps if new years day was a week, we could have more time to bring ourselves together and beginning to change, but only a day?
I question it, but that is only me. I know the idea of New Year’s being a basis for resolutions brings an emotional determination to succeed, a belief that millions of others all over the world are just like you, scribbling down words on a notebook, and hoping that this year will be different because of it 🙂
But tell me, what do you guys think of New Years and the resolutions which inevitably go with it? I won’t lie when I say that despite not actively writing down and following something, I can’t resist imagining a whole new amazing 2014 if I changed a couple of things about my life 😉
While you contemplate your lists or thoughts or just enjoy a sleepy day after the hectic New Years parties you all undoubtedly enjoyed, eat some cake.
Specifically, eat some red velvet cake. Eat some green velvet cake. Just eat some cake.
Eat it when it is small, cute and deliciously warm straight from the oven (though I admit, I almost overbaked because I got caught up in watching Christmas specials :P), and see the soft chocolatey- deliciousness inside 🙂
Eat it because it is a now 2014 and regardless of how you do it, it is a time to celebrate (with red velvet bundts) 😀 😀 😀
HAPPY NEW YEAR!
Mini Velvet Christmas Bundts
Adapted from: Penguin Says Feed Me
Ingredients:
Cake:
- 1 1/2 cups plain flour, sifted
- 170g butter, softened
- 2 cups caster sugar
- 3 eggs, room temperature
- 2 tsp vanilla essence
- 1 1/2 cups buttermilk (I used 1 1/2 cups milk with a splash of lemon juice in it)
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 1/2 tbs cocoa powder
- 20g white chocolate, roughly chopped
- Red food colouring
- Green food colouring
- Cachus balls, to decorate (optional)
Method:
- Preheat oven to 170 degrees C. Butter a mini bundt tin rigorously.
- Place butter and sugar into a large bowl and cream till light and fluffy.
- Beat in the eggs, one at a time, till well incorporated. Beat in vanilla essence.
- Stir the salt and soda through the plain flour.
- Stir through the flour mixture buttermilk alternating with the buttermilk into the egg mixture, stirring after each mixture to ensure the batter stays smooth
- Split the batter in two. In one bowl, add the cocoa powder into one bowl and mix through.
- Zap the white chocolate in the microwave in 10 second intervals or until melted. Pour into the other bowl.
- Add the desired amount of red food colouring into the cocoa powder bowl.
- Add the desired amount of green food colouring into the white chocolate bowl. (I added this part in now because I found the green does not work well with cocoa powder, and comes out brown)
- Spoon the batter alternating with each other into the mini bundt tins then using a skewer, mix through them
- Bake for 18-20 minutes or until a skewer comes out clean
- Let rest for 5 minutes in tin before running a skewer around the edges of the cake and tipping them out – let cool to room temperature on a wire rack.
