More Gold Than Green…

It feels like Australia Day is never ending this year. Why?

Because the hot, sweltering barbecue-eating, beach-swimming, singlet-wearing weather I associate with it is just not seeming to end! I cannot get over how golden the sun is.

And how hot the temperatures are, by Odin, by Thor, by Jupiter, by every ancient god ever, DAMN… it is hot.

You know Australia’s whole ‘green and gold’ pride? Well it should be more gold than green because every plant I see right now is turning a rich yellow.

And is wilting, soft as gold.

Where is the grass?! Now you’re just some foliage that I used to know… (channeling my inner Gotye!)

I am sweating now, despite sitting in a fan, window open fully and my hair is a bit stuck to my face. Um.

Yuck.

So I cannot keep typing, for fear that if this heat does not melt me first, it will fry my computer quite happily 😛

Perhaps I should go take a dip in the pool now…

Sorry (not really!) for the short post! And a note – to all those who can now comment, YAY! And to all those who still can’t I have contacted again, but try doing it from a computer? Because tablets and phones are apparently a touch dodgy 😛

Time to go suck on ice cubes and put freezer packs on my face!

OH WAIT. STAHP! I didn’t even mention these gorgeous mini cupcakes, silly me! I guess thinking about ovens is making my brain softer than the heat already has 😛

Remember Biglolly? Well, the second packet of samples they sent me was of their Green & Gold Mini Jelly Beans pack! Sweet, delicious and memorable, I liked their flavour and chewiness so much! These were a solid 8/10 for me 🙂

– Yellow – A lemony flavoured treat with, a bit of an extra chew, where it got stuck to the bottom of your teeth haha
– Green – I couldn’t really pick it completely, it was either Green Apple or Pear (or a super weird lime :P) but was my favourite flavour, regardless of its ambiguity!

As a decoration on my golden cupcakes, they looked quite cute, but I bet you could easily put them in the batter (just an idea!) 😀

Green & Gold Mini Cupcakes (Mini Coconut Cupcakes)

Ingredients:

Coconut Cupcakes

  • 100g butter, softened
  • 1/2 cup brown sugar
  • 1/2 tsp coconut essence
  • 1 egg
  • 3/4 cup self raising flour (SRF)
  • 1/2 cup desiccated coconut
  • 1/3 cup full cream milk
  • 1/4 tsp salt
  • 1 cup white chocolate chips/jellybeans, roughly chopped (I ignored both)

Green Ganache

From: Cadbury Kitchen

  • 250g white chocolate
  • 125ml thickened cream
  • Couple of drops green food colouring

Method:

  1. Preheat oven to 180 degrees C. Line 18 holes of a mini cupcake tin with mini cupcake liners (and grease one mini bar tin)

  2. Use an electric mixture to beat the butter, sugar and essence together till pale and creamy
  3. Add in the egg and then beat again till combined
  4. Sift in the flour and add in the coconut into the egg mixture. Stir till mixed through slightly.
  5. Add in the milk and mix through till a smooth batter forms
  6. Stir through any additional add-ins you desire such as the chocolate or the jellybeans
  7. Bake for 10-12 minutes or until golden brown, with a skewer inserted coming out clean (14-15 minutes for a mini bar tin)

  8. Let sit in pan for 10 minutes before removing and letting cool to room temperature on a wire rack

  9. While Cooling: Heat cream and white chocolate together till melted and smooth. Add in the green food colouring till desired shade, let cool for 5-7 minutes and then dip the cooled cupcakes into it, swirling it so the ganache coats the top without spilling

  10. Decorate mini cupcakes as desired 🙂

    Come back to the USA, CCU, to New York State or any other state for that

    But, running the oven in that heat must be a punishment. Hope you have a li’l toaster oven. It’s a great sub. xo

  8. Cute cupcakes! So appropriate for Australia Day. Sorry about the beastly heat — that’s something I don’t handle well. So it’s always air conditioning for us when it gets too hot. Hope the heat breaks soon.
