Ok so I have this blogging buddy of mine and she’s pretty cool. No wait, cross that, she is WAY awesome 😀
You can call her Minnie (I call her Aunty!) and she blogs/entertains over at Lady 8 Home. Even her name had me giggling the first time I visited her fabulous site! 😀
Now Minnie is a little bit amazing. She may claim otherwise but 99% of the time, her dishes are utterly and absolutely deliciously breathtaking. And so is her photography (which I think you can probably already see)
So without further ado, I present to you Minnie and her gorgeous savoury dish which, for the first time ever, has Go Bake Yourself posting a meat dish – enjoy 😀

When you guest post for someone as brilliant as Choc Chip Uru, you feel nervous. It’s understandable. You have a certain standard to live up to, or, as in my case, crawl up to.
As my 9 year old son used to say when he was about 5 – ‘I thunk and thunk and then got tired’ – I can pretty much identify myself with that state of affairs ever since I signed up for guest posting with CCU.
I ‘thunk’ I would make something outstanding; something at par with the sublime creations Choc keeps posting. It would have to be a sweet, and of course, something so delightful that jaws would drop. Well, day- dreaming never harmed anyone, did it? (Unless you were driving, or holding scapel over a prone body with a ruptured ….never mind).
I felt like a contestant on ‘Chopped’ who often run around, like chicken without head, to figure out what to do with their basket of ingredients. It’s the Christmas month, so I wanted to create something that had red and green in it. I considered baking a cake, discarded it. Cookies? It’s Christmas time! So they are all over the place on foodiesphere, so discarded again. Mousse! Yes, that would be great. No, let me make an ice-cream. Yes! That would be best.
So my endeavor started. I made several Ice-creams. One was a total disaster (even my ice-cream crazy son left it untouched) but a couple of them, I must say, were quite good. However, as most of you might have experienced, some foods just don’t like cameras and won’t co-operate. The pictures just wouldn’t do justice. By the time I managed to take a worthy shot, the ice cream had melted.
Then one night I made this dish. You see, I am a completely a savory person. I like sweets, but I like to buy them as versus making them (which helps my waist line too ;p) And this particular dish came out dazzling tastebuds. Hmnnn….the more I ‘thunk’ the more I knew what I wanted to do. THIS was what I wanted to share on CCU’s site!
So I present you with Green Chutney Fajitas. This is a slightly Indian twist on the traditional Mexican fare.
This recipe does two things in one single stroke – gives you a great recipe for ‘green chutney’ and gets you absolutely delicious fajitas in the process. It’s not only delicious, healthy and low calorie, but it even earns you extra brownie points on looks. And it has both red and green 😀
If you have stayed with me so far, then maybe you would like to know something about me as well 😀 My name is Minnie. But most of all, I am a big time foodie. I love to eat, cook, feed and eat out. Spinning stories is another of my longtime love. I would love it if you can hop over and say hi to my recipes.
Green Chutney Chicken Fajitas
Ingredients:
Fajitas:
- 1 lbs boneless chicken cut into 1”X4” strips
- 1 red bell pepper cut into long strips
- 1 yellow onion sliced fine
- 1 tsp red chili powder
- 2 tbsp olive oil
- Pam cooking spray
- Salt to taste
Green Chutney
- 1 cup fresh cilantro leaves
- A few leaves of fresh mint
- 2 green chilies (Thai/jalapeno/Serrano)
- 1 tsp fresh garlic paste
- 1 tsp cumin powder (fresh roasted and ground)
- 1 tbsp lemon juice
- 1 tsp salt
Method:
- Blend all the ingredients for the green chutney together in the blender till smooth. Taste for salt, add more if needed.
- In a Ziploc bag, put the chicken pieces and pour the marinade over it. Shake the bag until it’s nicely mixed.
- Refrigerate for an hour to overnight.
- In a skillet, heat oil.
- Fry onions and red bell peppers.
- Add red chili powder and salt to taste.
- Sauté on high, till they are translucent.
- Using a slotted spoon, transfer them on a plate. Set aside.
- In the same oil, fry the chicken pieces after they are done marinating.
- Spray Pam to keep the chicken pieces moist.
- Cook till they get some nice brown spots. It should not take more than 10 minutes.
- When the chicken is cooked, mix the onions and peppers, sauté for 30 seconds and take the skillet off the heat.
- Toast a flour tortilla and pile it with the fajitas. Add zesty homemade baked fries on top. Serve with sour cream, salsa, and habanero sauce.

I’ve made something similar, but didn’t do it fajita style. This looks incredibly delicious. I could imagine marinated chicken with cilantro smelling so good.

Hi Minnie, this looks like a great take on an old favourite. We love to eat fajita’s, in fact, there was a time we would have fajita’s once a week on Fajita Friday. We have a much bigger repertoire of dining delights so it’s not as often anymore.

Explosive fajita with green chutney. Looks like the chutney was prepared with the known Indian flavours and of course, I am in for it. Somehow so strange we have chutney with rice and never with fajitas. In fact, I have a mango chutney lined up soon but like said, more of a condiment or dip for rice.

I’ve just finished my practical tests & theory and everything feels soooo much lighter and happier now! Great post and lovely looking dish, I’m a big fan of the pre bag marinade myself so no doubt it’s a time saver, which means I get to eat quicker! 😉
