I am a lazy person
There, I admit it. What are you going to do about it? Admit it. Sometimes waiting for an oven seems like a lifetime, especially when your batter is slowly decreasing in amount… That is where the microwave comes in.
Now I make many microwave desserts. A brilliant 5 minute chocolate cake, cheesecake and want to try brownies. The only thing that has failed is a peanut butter cookie. I want to add this to my repertoire. Simple, perfect and beautiful to eat.
This crumble is warm and tender and reminds me of a big hug at 12 midnight!
That is useful when your mum isn’t here :p! Awww… sentimental me…
Anyway though, please try this recipe. I have made a few adaptations like reducing the caster sugar, not adding cornstarch because I didn’t have any but it is strongly recommended and reducing some cooking times. Next time, I will probably also peel the skin (all the fibre is in it, I had to keep it!) because it got all wrinkly and serve it with vanilla ice cream mixed with cinnamon. YUM! Oh and decrease the brown sugar to 1 1/2 tbs. Oh, whoops, I also added some allspice as well. I love a fragrant apple crisp! And (last note I promise) add in some nuts into the crisp topping like walnuts or pecans (2 tbs) for extra crunch!
10 Minute Apple Crisp

Serves: 1
Ingredients
- 1 apple, peeled and sliced
- 1 tbs caster sugar
- 1/2 tsp cornflour
- 1/2 tsp nutmeg
- 1/2 tsp mixed allspice
- 1 tsp cinnamon
Crisp Topping
- 1 1/2 tbs (generous) butter
- 2 tbs rolled oats
- 2 tbs brown sugar
- 2 tbs plain flour
- 1 tsp cinnamon
- Nuts (optional)
To Serve (Optional)
- Golden syrup – My BIGGEST MISTAKE not using
it! - Vanilla ice cream
Method
Starting with the crisp topping:
- Heat a small frying pan on medium and cook the ingredients for the crisp topping mixture until it is a darkened golden brown making sure to constantly stir so it
doesn’t burn (approx. 4-5 minutes) - Remove from heat and set aside.
- In a small mixing bowl combine sugar, all spices (not allspice, all the spices!) and cornstarch
- Add sliced apples and mix the dry ingredients into the slices until all the dry mix is used up. Place apple mixture in a microwavable cereal bowl, cover with plastic wrap (folding some of it back to vent it), and microwave for 4 minutes or until tender – I only needed 3 minutes so do it in 1 minute or 30 second intervals to be safe
- Remove from microwave and add crisp topping and gently press it down into the apple mixture with the back of a spoon.
- Place the bowl back in the microwave and heat for 30 seconds (I needed an extra 15 seconds for more crunch)
- Remove from microwave and allow to cool for 2-3 minutes. Top off with vanilla ice cream and enjoy!
