Chocolate Shortbread Meets Coconut Cream Pie Xmas Present

The season is finally upon my household! And the Christmas baking has begun! 🙂

Don’t you love this time of the year???
Well, silly question – everyone does. Let us move on.

I am not a traditional dessert maker. Just because it is Christmas doesn’t mean I make red, green and white cakes only or bake gingerbread houses. I bake what I feel like and incorporate my own Christmas spirit into it – a.k.a Love and utter enjoyment.

Less Than 2 Minutes = Nutella Muffin

Still sick today!!! And I missed out giving Ms D her melting moments at her surprise party 😦

And just now, I had a Nutella craving – but seriously, who can be bothered to whip up Nutella brownies or Nutella crème brulee or something! Forgive me Bell’Alimento but not all of us have a Nutella cooking gene of creativity!!!

So then I thought and pondered and definitely wanted more than just banana in Nutella or spoon in Nutella (hehehe…) and then it hit me! I had a single muffin – no, sorry, a SINGLE LADY muffin recipe stored away after a long scour through healthy dessert addict, Chocolate Covered Katie’s, blog.
What I loved about her posts on these muffins was that they were healthy as sin with just about no sugar (1 tbs sugar is how much people put in their coffee or something!) or sugar substitutes, no butter (which I continued in my adapted recipe) and basically nothing which can cast your thighs in the spotlight while still delivering a sneaky hit – cool huh?

11Best part was that it was a microwave recipe and I love microwave recipes! If you are sick and sore but want something a bit more extravagant look no further than here folks – this takes even less time than the 5 minute chocolate cake recipe!!!

Sugary Lunch

Sometimes I need massive hits of sugar – so much sweetness that I can finally relax and enjoy myself instead of continually nibbling on tid-bits. That is when I have a sweet lunch. It is really simple. I just make 1/4 or 1/8 of a recipe and eat it as my lunch. Nice no?

I have been known to scarf done tubs of ice cream, molten lava chocolate cakes and sometimes even mini microwave cakes on these occasions. Today I was sold on brownies. Specifically these mini delectable s’mores brownies.

You guys know what s’mores are right? This American idea which consists of two digestive biscuits filled with chocolate and marshmallows before being heated in campfire embers (or the grill/microwave) until the mallow is gooey and the chocolate is flowing. I’d say DAM, these brownies do a good imitation of them. Plus they have a brownie included which makes it all the more better no?

So should I make you jealous of my lunch while you healthy normal folk indulged in sandwiches? Yes, yes I think I will.

44. Nothing Is What It Seems – Slimy Cupcakes

Today at school, we made some cupcakes. They were small, cute and utterly delicious to those who adore peppermint (Je le deteste, c’est vrai!) but even with the fresh minty aftertaste, I didn’t mind licking the batter bowl!

But there are a couple of reasons of why nothing was what it seemed with these cupcakes – off leading, slightly upsetting and downright weird! For one thing, the icing – the Shrek green icing was a vanilla buttercream! When I see green, I see mint, but the icing bowl was my haven! Secondly and obviously then, the mini rich chocolate cupcakes were filled with pepper mint essence, which was totally not expected either!

Another thing which may have put a person off was the icing – see, my partner and I are a little impatient – anyone who is a true baker knows the difficulty of waiting during cooling time, fingers itching to slice up the cake and gobble! So, we thought that waiting 10 minutes was quite respectful so we started to ice. And the icing starting to melt.  This led to the most delicious slime ever…

Disaster With Brownies + Happy Birthday CG 2011

Let me tell you how it all began – I knew I wanted to make CG brownies – she covets them she does and whenever I am food blog searching at school during English or Science etc (give me a break, all my exams are over and the next 2 years are not the definition of fun!), CG is my partner in crime, especially brownies!

And I did – but it turned out to be one of the biggest disaster recipes for me ever! I don’t understand, I followed the recipe to the T and the batter didn’t bake – at all. And it was for cream cheese snickers brownies…

Pears & Chocolate

Can I be honest with you? I don’t like pretentious desserts. I don’t like the bite size portions of something like vanilla custard flan topped with sweetened elderflower seedlings on a bed of bitter chocolate orange glaze or whatever. I find it weird and slightly twisted, like they are forcing together a jigsaw puzzle that just DOES NOT match!

And let’s be honest – the only thing I know about elderberries is that your father smelt of them!

Anyways, as I continue my rant about these significantly tiny, wussy desserts, let me add one part which has always been the straw that broke the camel’s back. Pears poached in red wine.

I know, I understand that a ton of high class adults would be shuddering right now and Psycho’s high pitched violin is roaring in some of your heads but seriously. Ew.

Firstly the colour – pears are not red.  Nor will they ever be. That is why have apples remember? Secondly the flavour. Oh my, when I ate a little it was like the sickly sweet cherry flavoured cough syrup – it burns the throat and is disgusting! Thirdly, it was served with a tiny sliver which I count as a crumb, of chocolate cake. Now serving something so vile is just unjust and unforgivable in the face of chocolate.

Not A Regular Cookie

Finally! I just want to say how great it is that I have made a chocolate cookie – from the date it has been over a week since I was cooking with chocolate (*gasps in shock*)

Anyways, have you heard that saying “When life gives you lemons, make lemonade”? Well, if you haven’t, it is pretty self-explanatory in saying that when you get an opportunity in life, make something of it!

It is deep, meaningful and I believe in it completely. Especially today 🙂

4You see, I have taken this life lesson to mean basically to me “When school gives you a strike, use it to do the thing you love most” – And I think you agree that for me that is cooking!

When Nutella Soothes Pain

Yes, yes I know it ALWAYS soothes pain. And today was no exception.

You see, I have a beautiful new phone and it refuses to sync with iTunes. My back up, songs etc. etc . are failing to back up.
I am a stressy person when it comes to these things in life.
Put two and two together and you will see that I am currently in quite the possition!!!

So I went to my trusty Nutella jar and ate a sandwich (bananas toasted with nutella in bread is quite the thing to usually perk me up)

Didn’t work – needed more Nutella and *GASP* pantry was empty. No this is not really a surprise since I refrain from buying too much Nutella due to my immense love for it.

So I thought and thought and with the banana brain food (I know it is a healthy sandwich deep down!) and remembered an idea I thought of a while back – Nutella Milk.

Diwali Baking #4

I have a tendency to go overboard. Whether it be decorating, amount of time spent on hair, listening to a single song. I always go overboard.

While this may not always be a good thing, it certainly is in cooking. I go overboard with the amount of time I spend on cooking, the amount of time I recipe hunt and I am generous in regards to essences and add-ins. This is what made this cake such a good choice. And I think I can definitely go overboard for the family receiving it. They are awesome (and have a very adorable dog :))
