You remember when I tried to be silent and it did not work at all? Today I am going to try it again, not for my benefit or yours but to appreciate the simple pleasures of life. You know how some people just ask you to shut up stop talking and look at the world. Here’s looking at the world.

Now (soon), I am going to be the shut-upee stop talking FOR REAL for one post and make this a picture post which will uplift you, revive you and enchant you. Who can resist puppies with photoshopped eyes or a rainbow so vivid, you could actually find that pot of gold? 😀

Virtual Vegan Potluck Finally Here

What is a vegan? We all know the basics of this right? No eggs, no dairy, don’t wear silk and love raw cookie dough balls. Didn’t know the last one? Well now you do 😀

Veganism is truly defined as: “The practice of abstinence from using animal products” – I used to think every vegan in the world was a saint. I am not even kidding you. After all, how could one manage to live in harmony without chocolate, ice cream and fluffy sponges which need eggs?

Now, after starting blogging, I met many a vegan blogger. And yes, while these guys are still saints, I learnt from them that they enjoy life just as much as us vegetarians and omnivores 😉

A Bleeding Cake Due To My Mistake

Even though today is April Fool’s Day (Happy April Fool’s Day!) I am not fooling you when I say I baked up a little bit of a disaster two nights ago 😛

I am serious, I was almost cringing but in the end, masked it real fine 😀

It all began like this…

Meet my subconscious mind. Most of the time she is a happy person but has a tendency to get a little temperamental when it comes to things I really adore, such as chocolate (I think you got a little whiff of her dangerous side here)

The cake I was planning was to be a graduation present. I mean honestly, that is awesome right? Graduation and cake go together like apples and pie, chocolate and peanut butter, just as much as birthdays and cakes 😀

So while my conscious mind was getting all excited, I have come to believe my subconscious mind got pricked in the wrong spot.

“If this cake is a gift, that I means I do not get to eat it. Not happy. Not happy at all”

Meanwhile, I am happily planning an extravagant over the top deal filled with deliciousness. So I come up with this plan

  1. A Bundt Cake
  2. A Chocolate Mudcake in a bundt tin
  3. A layered chocolate than white chocolate mudcake in a bundt tin
  4. A tunnel of strawberry jam running in between the two layers

  5. Final thought: Tunnel of Jam Neopolitan Bundt Cake – yay, woohoo, yea 😉

I collect ingredients, organise the bench and get to work…

I do think now my subconscious mind thinks she is cleverer than my conscious mind. What she does not realise is all that bombardment of English analysis on my conscious mind does help in thinking outside the square when it comes to cooking… and now mistakes 😉

Back to the story…

I am happily making my chocolate batter, mixing melted butter and chocolate, attempting to not eat the packet of choc chips and fiercely keeping a spoon away from the batter.

No problems? Check

Moving on to the white chocolate batter my subconscious mind comes in for a chinwag… not a jolly one either 😉

“You will add 2 eggs, not one”

I was making half of both mudcake recipes to layer them. The chocolate cake had 4 eggs. The white chocolate cake had 2. And I added 2 eggs to the batter made for 1 egg. And it got liquidy. Very very liquidy.

I begin freaking out. Silently in my head while keeping a cool composure 😉

“Mwah hahahahahaha. Now the chocolate mudcake will be baked and all for me…”

So I work quick and randomly add in an extra 1/2-3/4 cup flour into the batter.

“What is going on….”

Dump in a couple of extra tbs caster sugar. Taste the batter and although I have no idea what the consistency should be like, I give it a shot anyhow because it tastes alright 🙂

In a greased-sugared Bundt tin, I pour the chocolate batter, add a tunnel of jam and then pour on the white chocolate batter.

The white chocolate batter engulfs the dark chocolate batter and I know there will not be any layering. And that the ‘natural’ swirling will not be a pretty sight.

“It will look too ugly to give… and I get a full cake – could this day get any better”

This is how my cake comes out. A patchy marbled mudcake complete with a jam swirl. Oh dear… My cake is bleeding…

Post refrigeration: The final step

Icing – I use white chocolate icing and drizzle it over. Ok not absolutely ugly anymore. Popped in some strawberries. Hmm…

“You are a perfectionist U, you won’t give something that looks so blah to anyone, save it for yourself [me] and relax…”

I needed some green – the strawberry leaves were  pretty average and brown-green. No thanks. And then mummy dear swoops in for the win. “Why not colour some icing green and do a design on top of the white?”

“No, no, noooooooooooooooooooooooo” – Defeated subconscious mind…

And that is what I did. And it actually made a very, um, mistakable cake, quite presentable as a graduation cake. Taste? Obscenely delicious reviews all round 😀

Honestly here is what I learnt from all my baking mistakes

  1. Keep the recipe closer to you at all times
  2. Do not try a new idea for something so big
  3. Cake layering is not the same as cheesecake on top of brownie batter layering
  4. The subconscious wants are not stronger – learn to control oneself consciously 😀

Anyhow, so you know what this cake was meant to be all about. Here is how I would make it now if I wanted it to look pretty sans icing 😉

To swirl

  1. Pour in batters and jam alternating to each other till they are finished (roughly go for 1/2-3/4 cup jam)
  2. Swirl gently and you are good to go 😀

This recipe was a keeper – it was soft, moist and the two mudcake flavours complement each other considerably while the jam surprise in some bites is awesome! Of course the icing too is a killer 😀

A Mad Weekend

This weekend was mad in the kitchen. This weekend I baked two dishes and neither. one. had. chocolate.

It is not even a case of rustling up a one person dish for myself like my last post which was exploding chocolate-y goodness. I just did not bake with chocolate, my melts resting comfortably away in their pantry instead of screaming and running amuck like usual. Not that I would know of course 😉

And what is even more astounding that the cookie batch and the mini cakes batch would be perfect for a tea party. You know what else goes well with tea/hot chocolate, oh whoops there I go again, chocolate!

I feel my temperature running high, my head starting to spin – I simply must have been quite delusional as to do this to myself and to my family (who actually sacrilegiously prefer it this way!)

My Brother’s Last Teen Year (Traditions Of March #2)

We all love our siblings. There is no doubt about it (nodotabotit as my brother likes to say) that a lot of the time, you can share the world with them, even more than your parents and that is totally normal (mummy, daddy you never heard this from me! ;))

But of course then there are the times that siblings fight – I am talking from the stupid hair yanking to sock hitting to pillow fights to more grown up ‘angry discussions’ like taking too long in the bathroom in the morning and sharing the car 😛

Australia Day Festivities Begin

Coming up on the 26th of January is Australia Day!!! National holiday for all us Aussies, we whip out barbecues, beach umbrellas and cricket bats from dawn and celebrate with friends and family alike!

It is where people party and do whatever their heart desires to show both their Australian pride and enjoy themselves and that is what makes this so great! Everyone comes together under a big gold sun, shuffling their feet through soft green grass and wearing the green and gold so right for the occasion (really, no way!) 😉

Now I know there are some misconceptions out there about what Australians and Australia are really like. I guess every country has its stereotypical image, but I need to make a couple of things clear because seriously, this is our day of partying and I don’t want you to imagine bushwalkers waltzing with koalas around a billycan, beer bottles in hand 😀

Nutella Baking Week Continued: Nutella Chocolate Molten Lava

Yesterday I kick-started this Nutella week into drive (I’m a Learner right now – sheepishly proud :P) with some delicious breakfast scrolls. Today, I am giving you the antithesis of breakfast – a dessert – but by NO means, am ending this week yet. Nice right? 🙂

Warning: If the name has not already given you a heart attack, the following post contains explicit images and strong descriptive language. Not recommended for persons under the age of 5 (guaranteed sugar rush) or over 85 (delicate body systems)

Now back to this dish. An original Bell’Alimento, this dessert (recipe here) should be knighted. It has a slightly crisp yet fragile and crumby exterior which gives way to the slightest pressure with a spoon to release the molten flowing Nutella lava. It languidly flows all over the plate, soaking into its protective shell of a cake, softening it so it becomes like cake crumbs swimming through chocolate fudge.

Chocolate Chip Baking Week 7: Thick And Cakey Chocolate Chip Cookies

I am asking you a very personal question – have you ever had that dream where you are eating a giant marshmallow but on waking, are actually chewing on your pillow? No?

Good because obviously neither have I. But I believe now that should I ever happen to have this dream (stranger things have happened, I assure you!), it won’t be a giant, fluffy marshmallow I am devouring. It will be this cookie, only ultra mega-sized.

215I kid you not, this cookie has simply taken up the position as winner of the Thick and Cakey section as if it was born to be there. And as its name suggests, it obviously was. When you bite into one of these darlings, it feels as if your teeth are chomping through a never ending bite of soft, chewy cookie dough pillow. It delivers twice the POW of a normal cookie due to the extraordinary thickness.

Happy Birthday Baba 2011

Today was a very special  day – my grandpa grew one year older 🙂
Everyone loves birthdays and my grandpa is someone who doesn’t seem to ever spoil himself – this year I decided to spoil him for him! (Not that I didn’t last year with that Carrot Cake of mine :P)

Anyway, it is not easy I suppose to spoil him though because chocolate is a very rare treat which he enjoys off occasion, but usually not a lot of. And if you know anything about me, by now which you do, I have to say that my most decadent dishes are essentially all chocolate based (perhaps my secret OCD – no, not secret I agree…)

18So then I went to my greatest source, Exclusively Food, to find a non-chocolate recipe which was still decadent and worth spoiling my sweet granddaddy with and surprisingly, came away with this fruity, one bowl (so to speak) and quite light dessert: An Apple Blueberry Crumble Cake.
