Less Than 2 Minutes = Nutella Muffin

Still sick today!!! And I missed out giving Ms D her melting moments at her surprise party 😦

And just now, I had a Nutella craving – but seriously, who can be bothered to whip up Nutella brownies or Nutella crème brulee or something! Forgive me Bell’Alimento but not all of us have a Nutella cooking gene of creativity!!!

So then I thought and pondered and definitely wanted more than just banana in Nutella or spoon in Nutella (hehehe…) and then it hit me! I had a single muffin – no, sorry, a SINGLE LADY muffin recipe stored away after a long scour through healthy dessert addict, Chocolate Covered Katie’s, blog.
What I loved about her posts on these muffins was that they were healthy as sin with just about no sugar (1 tbs sugar is how much people put in their coffee or something!) or sugar substitutes, no butter (which I continued in my adapted recipe) and basically nothing which can cast your thighs in the spotlight while still delivering a sneaky hit – cool huh?

11Best part was that it was a microwave recipe and I love microwave recipes! If you are sick and sore but want something a bit more extravagant look no further than here folks – this takes even less time than the 5 minute chocolate cake recipe!!!

Whoops + Melting Moments

I told you I had to bake again today and here it is – the most delicious, melt in your mouth recipe for Melting Moments. I can’t explain enough how simple and effective this recipe is in delivering a crunchy exterior cookie with a soft inner, touched up with lemony frosting in between – it is my dream pillow…

Why the whoops? Well, hehe, funny story, you’ll die laughing when you hear this – I used wholemeal flour instead of plain. Because I couldn’t obviously tell the two apart… oh dear, oh my…

3You see, there are no labels in our home and really, why should there be – when I look at it now, it is so easy to tell the difference between the two! But, I am going to blame my sickness and say that it scrambled my brains and made me use wholemeal flour in this delightful cookie which is still just as delicious may I add… just not as pretty you know…

Macaron Madness + Homemade Caramel

This post is actually written 1st December – I think WordPress is in American settings and I cannot be bothered to change it 🙂

Hello all, here I am home sick from school with a lot to tell. But before let me tell you two things

  1. It is the 1st of December – THE JOLLY SEASON IS OFFICIALLY HERE!
  2. It is good to get sick before your formal – formal countdown = 11 days to go!!!

Ok cool, now I can tell you all about everything. Yesterday after school, my awesome cooking teacher Ms D held a Macaron Baking Afternoon! Just like the meringue tower and the fruitcake, this was also an end of year finale event, and although only 4 of us students were able to make it, it was fantastic!
She had set out an array of different colourings and essences (dudes, I am talking apricot colours, coffee coloured with brandy essence – whatever you wanted to make and mess with people’s minds!!!) and our task was:

Sugary Lunch

Sometimes I need massive hits of sugar – so much sweetness that I can finally relax and enjoy myself instead of continually nibbling on tid-bits. That is when I have a sweet lunch. It is really simple. I just make 1/4 or 1/8 of a recipe and eat it as my lunch. Nice no?

I have been known to scarf done tubs of ice cream, molten lava chocolate cakes and sometimes even mini microwave cakes on these occasions. Today I was sold on brownies. Specifically these mini delectable s’mores brownies.

You guys know what s’mores are right? This American idea which consists of two digestive biscuits filled with chocolate and marshmallows before being heated in campfire embers (or the grill/microwave) until the mallow is gooey and the chocolate is flowing. I’d say DAM, these brownies do a good imitation of them. Plus they have a brownie included which makes it all the more better no?

So should I make you jealous of my lunch while you healthy normal folk indulged in sandwiches? Yes, yes I think I will.

Successful Imitations

Weekends: They are a special time no doubt – some people wake up lazy to breakfast in bed, some people do not wake till the afternoon, some people go to sport – Me? I wake at 5am like my body clock makes me every day every week as usual, eat my breakfast after lolling around at around 6:30am and then go into the kitchen to bake – these home made LCM bars I made this morning were finished by 7:30am – talk about timing 😉

I do believe everyone with a loving childhood has heard of LCM Bars – You know, Kellogg’s delicious excuse for children eating rice bubbles and/or coco pops in a bar form? I personally adored, no adore, LCM bars – they are sweet and sticky in every bite and when you got a chocolate chip – OH MY!

My only concern back then and even now was that the add-ins they put into this bar were scarce – I mean, a scattering of chocolate chips on top but none inside, coco pops dominating over chocolate rocks – seriously, not happy chappy (another phrase I have now gotten out of my system!)

Now that I can say I have a little experience in my baking, I decided to make my own recipe for LCM bars the way I should have been eating them in my childhood should my mum had been an overly obsessed baker like myself.

Hummingbird Meets Cake

Before animal rights activists come rushing at me with pitchforks or there is any other sort of misunderstanding, let me make one thing title – no birds were harmed in the making of this cake.

There were no shootings or other illegal activity of that kind or boiling in a witches cauldron – after all, I myself am a vegetarian 🙂

Date Cake Turned Cookie

I love it when two completely different categories of sweet food items come together – cake batter ice cream, apple pie cookies, fudgy brownie cake – the list is truly endless.

So when I came across these sticky date cookies in my very reliable source of Woman’s Day, I was ecstatic. I love sticky date cake, especially the one from Gourmet Pizza Kitchen – You give me that cake, some caramel sauce and some vanilla ice cream and you will literally send me into a trance. You’ll send my brother out of this world, as seen by his love of the homemade sticky date pudding I made on his birthday last year 🙂

In order to make these cookies truly reminiscent of the traditional pudding cake, you do need the make the simple and delicious caramel icing – but of course, if you read my blog you would know, of my family’s ‘cut back sugar’ campaign so that did  not happen 😦

What did happen though (after a LOT of adapting I have to add) was a  deliciously soft and chewy cookie quite similar to the caramel drizzled one found at the Cookie Man in their indulgent range 🙂

212It had a lot of deep and dark sweetness due to the brown sugar and golden syrup combination which matched the sweetness of the dates to perfection without overdoing it – team that with oats and melted butter and Voila! – You have a similar to Anzac Cookie style sticky date cake inside a cookie 🙂

44. Nothing Is What It Seems – Slimy Cupcakes

Today at school, we made some cupcakes. They were small, cute and utterly delicious to those who adore peppermint (Je le deteste, c’est vrai!) but even with the fresh minty aftertaste, I didn’t mind licking the batter bowl!

But there are a couple of reasons of why nothing was what it seemed with these cupcakes – off leading, slightly upsetting and downright weird! For one thing, the icing – the Shrek green icing was a vanilla buttercream! When I see green, I see mint, but the icing bowl was my haven! Secondly and obviously then, the mini rich chocolate cupcakes were filled with pepper mint essence, which was totally not expected either!

Another thing which may have put a person off was the icing – see, my partner and I are a little impatient – anyone who is a true baker knows the difficulty of waiting during cooling time, fingers itching to slice up the cake and gobble! So, we thought that waiting 10 minutes was quite respectful so we started to ice. And the icing starting to melt.  This led to the most delicious slime ever…

A Piece Of Pie

Of course I didn’t just make savoury for the barbecue – helping make pasta and paneer and creating a dip is fun and all but seriously, so not brainwashed!

I decided a rustic style of dessert would be appropriate for this so I went with an apple pie. Simple, gorgeous and an unfailingly popular dessert for sure! This was actually my first time making a real pie and I realised this only yesterday – tarts I am all over but pies, oh my! And the humid weather really helped out (major sarcasm dripping in voice!)

Introducing… Savoury

That’s right folks, I have made and posted my first ever savoury dish – I feel so unlike me! But I am sure every avid baker who still lives with their parents has had the conversation ‘You must learn to cook savoury because when you are living alone, you can’t survive on sweets!’

**Ahem** – I beg to differ 😛

But finally after a long couple of months of insistence, I gave in and starting looking for savoury vegetarian (in case you didn’t know, we are all predominantly vegos) dishes and actually bookmarked a couple. ME!

19I wanted to start out simple and there was nothing that seemed better than this delicious Kidney Bean Dip recipe found at my greatest source, Exclusively Food! For a nice summer barbecue, this recipe was yelling at me to be made so you know – I went ahead and did it! And it was far from a disaster.
