Chocolate Chip Baking Week 1: Mrs Field’s Chocolate Chip Cookies

What makes Mrs Field’s Cookies so fabulous? Is it the soft and chewy factor, the delicious always-freshly-baked smell it gives off or the abundance of chocolate chip cookies? Personally, although they are not my favourite chocolate chip cookie in the marketplace, I think it is that sweet sugary crunch you get with each bite, reminiscent of eating cookie dough where the sugar has not caramelised.

47I was desperately trying to find a recipe for her chocolate chip cookies for this week – it was nowhere on the internet but this site claimed this recipe was legitimate. So I made this recipe and oh my gosh, they were much loved, much revered and had these qualities of the REAL chocolate chip cookie so globally loved:

Introductions: Chocolate Chip Based Baking Week

I have exciting news! And no I am not:

  1. Going overseas (just up to the coast actually)
  2. Buying a car (soon, you’ll all see)
  3. Getting my Ps (a little early I think but in approximately 8 months I shall be a lone driver!)
  4. Running away from home (I can’t even do all those grown up things like ‘balance a cheque book’ or whatever – I knew there was a reason so many people took economics in our school)
  5. Getting a dog (again, I need to be a wee bit older and a wee bit moved out…)

Feeling Healthy Pre-Formal

Two nights ago was one of the most anticipated events of my young life so far – my year 10 formal. The night was amazing at the beginning I have to say with all the fluttering and giggling and the ‘oh my gosh, you all look so utterly fabulous’ talking! Then, when we actually were inside, we were wowed by the decor – Vegas casino theme = martini glasses on tables, silvery balloon arch, gorgeous star themed light and a scattering of cards, poker chips and dice. Just try to picture it and I promise you, the hall we were in would look at least 10 times nicer (depending on the strength of your imagination of course :p)

Happy Birthday Baba 2011

Today was a very special  day – my grandpa grew one year older 🙂
Everyone loves birthdays and my grandpa is someone who doesn’t seem to ever spoil himself – this year I decided to spoil him for him! (Not that I didn’t last year with that Carrot Cake of mine :P)

Anyway, it is not easy I suppose to spoil him though because chocolate is a very rare treat which he enjoys off occasion, but usually not a lot of. And if you know anything about me, by now which you do, I have to say that my most decadent dishes are essentially all chocolate based (perhaps my secret OCD – no, not secret I agree…)

18So then I went to my greatest source, Exclusively Food, to find a non-chocolate recipe which was still decadent and worth spoiling my sweet granddaddy with and surprisingly, came away with this fruity, one bowl (so to speak) and quite light dessert: An Apple Blueberry Crumble Cake.

I Wanna Be A Billionaire So….. Bad

Yes I know the song was never about a millionaire but this recipe that I made was for a ‘Millionaire’s’ Chocolate Tart – it is all a lie, it should have been for a billionaire.

Also part of my Christmas extravaganza of a party (joking, it was a small affair!), was this tart – how can I explain it? The only way I can actually put it is that it is a mix between a chocolate caramel slice (the link is to the recipe I hope to make in the near future) and a delicious Twix style candy bar… sounds very decadent, rich and perfect for a movie, especially when paired with my popcorn ice cream!

53I admit, I was a little weary of this recipe initially – not off a blog with a story behind it, using 5 eggs (though I could have fared very well on using only 1/2 the recipe for the filling) and a mixture of melted white and dark chocolate… it sounded a little weird but the recipe in itself looked a little too enticing to miss so there – I tried it and boy did I win 🙂 (as did my guests)

Popping My Ice Cream

An undoable feat?

I think not.
Almost Bourdain thinks not.
Skye from Masterchef Australia thinks not.
And that is why this ice cream is so swaggering-ly cool.

I am a firm believer in trying new things and sometimes even strange ideas – combining flavours people don’t really expect will give such a positive kick until you tell them afterwards (I put a hint of cinnamon in my mum’s tea once and she loved her tea – I should probably tell her, though I have not done it since)

36This is why you will barely ever see me make the same recipe twice unless it is my staple, and even then I will probably adapt it in some way. I do believe the only recipes I have made and stayed with have been my staple original chocolate chip cookies (which could change due to my upcoming cookie dough baking week) and my brownies from Masterchef.

A Thicker, Richer Nutella

This is a quick post really – I have cooked and baked a lot more today but since it is for a very special Christmas party, I wouldn’t want to spoil the sweet surprises.

Anyway, you may be pondering over my title – totally understandable – how can this gooey, apparently-for-breakfast spread become a richer and more decadent version of itself?

Quite easy actually and can be done in 2 ingredients (the third is optional) – just make Nutella into Nutella Mousse.

35Amazing what a little (seriously, not much) thickened cream will do when it works its magic with runny Nutella in the comfort of a very cold fridge. What results is a super smooth, perfectly textured mousse which is eggless and gelatin-less and made super fast and super easily.

Stain Glass Window Cookies And A Final Goodbye

As Christmas approaches, formal approaches and basically, everything points towards the end of another school year. While this is truly fantastic as by going into Year 11, I am finally given the opportunity to study what I want, rather than pointless topography maps in geography, this is also rather sad – my food tech classes finally come to an end, the monotony of study without a decent break in the middle of the week begins and my food blogging must be controlled (but definitely done :))

1I feel a sense of loss at this change – it was expected so I don’t understand why it seems to hit so hard that it is over – I can only suppose it is because I shall never be taught by Ms D again, never bake or cook with friends in that atmosphere and never feel the pride in having a connoisseur smile and say the food you made tastes good – I will miss it all.

Chocolate Shortbread Meets Coconut Cream Pie Xmas Present

The season is finally upon my household! And the Christmas baking has begun! 🙂

Don’t you love this time of the year???
Well, silly question – everyone does. Let us move on.

I am not a traditional dessert maker. Just because it is Christmas doesn’t mean I make red, green and white cakes only or bake gingerbread houses. I bake what I feel like and incorporate my own Christmas spirit into it – a.k.a Love and utter enjoyment.

33Now see, this coconut chocolate slice seemed to embody exactly what message I was trying to convey – and it was totally in theme with my coconut cravings this week as well 🙂

3-Ingredient Coconut Bombs

Sometimes you come across a cookie that catches your eye. In my case, this happens quite a lot but when a cookie has a short ingredient list and a delicious name – it really stands out!!!

These cookies are tropical paradise – unlike those sincerely delicious chocolate cookies which require a large glass of Nutella Milk (since I simply detest ordinary milk and everything tastes better when Nutella is involved), these coconut bombs require a large tropical smoothie, maybe a non-alcoholic Pina Colada pineapple crush served with pineapple pulp and crushed ice. Yea, that’s it.

41Why? Why would I serve it as such?
Because these cookies do not consist of butter, eggs sugar and flour. They are not the usual heaviness (good heaviness) which comes with cookies and therefore need to be eaten with a drink which refreshes and rejuvenates as well as makes you think of surfs, beaches and shiny, sunny days – a good picture for the upcoming Christmas vacation no?
